Most recipes call for the best of this harvest season. After all, this relish was made to preserve the food for the winter months.<\/p>\n<p><a class=\"asset-img-link\" href=\"http:\/\/bostonzest.typepad.com\/.a\/6a00e54fc42bb8883401b7c88d337c970b-popup\" style=\"display: inline;\"><img decoding=\"async\" alt=\"IMG_0388\" class=\"asset  asset-image at-xid-6a00e54fc42bb8883401b7c88d337c970b img-responsive\" src=\"https:\/\/bostonzest.typepad.com\/.a\/6a00e54fc42bb8883401b7c88d337c970b-500wi\" style=\"width: 500px;\" title=\"IMG_0388\" \/><\/a><\/p>\n<p>Eggplant is the main ingredient. Tomato, onion, vinegar, garlic, raisins, olives, <a class=\"zem_slink\" href=\"http:\/\/en.wikipedia.org\/wiki\/Pine_nut\" rel=\"wikipedia\" title=\"Pine nut\">pine nuts<\/a>, capers, and olive oil seem pretty standard. Then come individual additions that vary by cook, region, or family. These include fennel, peppers, celery, and zucchini to name a few.<\/p>\n<p>The cook\u2019s choice of seasonings might include red pepper flakes, anchovies, sugar, oregano, mint, or basil. In other words, thrifty cooks made this from whatever the garden or market had in abundance on a given day.<\/p>\n<p><a class=\"asset-img-link\" href=\"http:\/\/bostonzest.typepad.com\/.a\/6a00e54fc42bb8883401bb09322da2970d-popup\" onclick=\"window.open( this.href, &#39;_blank&#39;, &#39;width=640,height=480,scrollbars=no,resizable=no,toolbar=no,directories=no,location=no,menubar=no,status=no,left=0,top=0&#39; ); return false\" style=\"display: inline;\"><img decoding=\"async\" alt=\"IMG_2892\" class=\"asset  asset-image at-xid-6a00e54fc42bb8883401bb09322da2970d img-responsive\" src=\"https:\/\/bostonzest.typepad.com\/.a\/6a00e54fc42bb8883401bb09322da2970d-500wi\" style=\"width: 500px; border: 1px solid #E6E4E4;\" title=\"IMG_2892\" \/><\/a><\/p>\n<h2>History of Caponata<\/h2>\n<p>Like many Mediterranean foods, this <a class=\"zem_slink\" href=\"http:\/\/en.wikipedia.org\/wiki\/Sicilian_cuisine\" rel=\"wikipedia\" title=\"Sicilian cuisine\">Sicilian<\/a> antipasto relish with its sweet and sour base, dried fruit, and pine nuts probably has its origins in the Middle East.<\/p>\n<p>Food historian <a class=\"amzn_ps_bm_tl\" data-amzn-link-id=\"38537e5b83bc843013e61fa169d2028a\" data-amzn-ps-bm-keyword=\"Clifford Wright\" href=\"http:\/\/www.amazon.com\/Mediterranean-Feast-Celebrated-Cuisines-Merchants\/dp\/0688153054\/ref=as_li_bk_tl\/?tag=bostonzestcom-20&amp;linkId=38537e5b83bc843013e61fa169d2028a&amp;linkCode=ktl\" id=\"amznPsBmLink_5500614\" rel=\"nofollow\">Clifford Wright<\/a><img loading=\"lazy\" decoding=\"async\" alt=\"\" border=\"0\" height=\"0\" id=\"amznPsBmPixel_5500614\" src=\"https:\/\/ir-na.amazon-adsystem.com\/e\/ir?source=bk&amp;t=bostonzestcom-20&amp;bm-id=default&amp;l=ktl&amp;linkId=38537e5b83bc843013e61fa169d2028a&amp;_cb=1472492437839\" style=\"border: none !important; margin: 0px !important; padding: 0px !important; height: 0px !important; width: 0px !important;\" width=\"0\" \/> traces it back to a food served on sailing vessels. The vinegar was a preservative and he notes that a version of it was served as a mariner\u2019s breakfast.<\/p>\n<p>On his website, Wright cites Sicilian food authority Pino Correnti who, \u201c&#8230; believes that the dish is derived from the Catalan word caponata, meaning a similar kind of relish, and says it first appears in a Sicilian etymology of 1709.\u201d<\/p>\n<h2><a class=\"asset-img-link\" href=\"http:\/\/bostonzest.typepad.com\/.a\/6a00e54fc42bb8883401bb09309998970d-popup\" style=\"display: inline;\"><img decoding=\"async\" alt=\"IMG_2879\" class=\"asset  asset-image at-xid-6a00e54fc42bb8883401bb09309998970d img-responsive\" src=\"https:\/\/bostonzest.typepad.com\/.a\/6a00e54fc42bb8883401bb09309998970d-500wi\" style=\"width: 500px;\" title=\"IMG_2879\" \/><\/a><\/h2>\n<h2>My Caponata<\/h2>\n<p>My version is lighter than most. I brush the eggplant with olive oil and roast or grill it, instead of frying, and saut\u00e9 the other vegetable in a minimum amount of oil. I also use what\u2019s on hand rather than follow a strict recipe.<\/p>\n<p>I cook the ingredients separately (<a href=\"http:\/\/amzn.to\/2buXK3E\">using my favorite pan<\/a>) and mix them later. This lets me ensure each vegetable is cooked properly and that nothing gets too mushy. With that, the question of a water bath or pressure canning comes up.
