I happen to like more texture on my plate, so I researched recipes for fall dining and the holidays where you could actually recognize a few chunks of real pumpkin.<\/span><\/p>\n<p><a class=\"asset-img-link\" href=\"http:\/\/bostonzest.typepad.com\/.a\/6a00e54fc42bb8883401b8d2300bbe970c-popup\" onclick=\"window.open( this.href, &#39;_blank&#39;, &#39;width=640,height=480,scrollbars=no,resizable=no,toolbar=no,directories=no,location=no,menubar=no,status=no,left=0,top=0&#39; ); return false\" style=\"display: inline;\"><img decoding=\"async\" alt=\"Unspecified\" class=\"asset  asset-image at-xid-6a00e54fc42bb8883401b8d2300bbe970c img-responsive\" src=\"https:\/\/bostonzest.typepad.com\/.a\/6a00e54fc42bb8883401b8d2300bbe970c-500wi\" style=\"width: 500px;\" title=\"Unspecified\" \/><\/a><\/p>\n<p><span style=\"color: #8b8b8b; font-size: 10pt;\"><em>When buying a pumpkin for cooking, be sure to get a sweet, tasty version like these pie pumpkins from <a href=\"https:\/\/stillmansfarm.com\/\">Stillman&#39;s Farm<\/a> rather than one grown for display.<\/em><\/span><\/p>\n<p>We are offered pumpkin flavor this and pumpkin flavor that! But, if you review the ingredients in those products, you may not find pumpkin on the list. Most \u201cpumpkin\u201d items contain what we might call pumpkin pie spices \u2013 cinnamon, nutmeg, ginger, allspice, and cloves.<\/p>\n<p>Even when a bit of vegetable is present, it may be processed, canned pumpkin or, in some instances, a different squash. There has been an Internet rumor that all canned pumpkin is really squash. <a href=\"http:\/\/www.snopes.com\/canned-pumpkin-isnt-actually-pumpkin\/\">Snopes, a trusted website that investigates such rumors says, \u201c90 percent of pumpkin sold in the U.S. (and 85 percent worldwide) is a proprietary cultivar known as a Dickinson pumpkin &#8230;\u201d<\/a><\/p>\n<p><strong>Roasted Pumpkin<\/strong><\/p>\n<p><span style=\"font-weight: 400;\">The first time Ed and I hosted Thanksgiving dinner in our home, we began the meal with a recipe for \u201cPumpkin Tureen\u201d from <a amzn-ps-bm-asin=\"1580081266\" class=\"amzn_ps_bm_tl\" data-amzn-link-id=\"2621da852f426befdc7b423a457fd245\" data-amzn-ps-bm-keyword=\"The Enchanted Broccoli Forest\" href=\"http:\/\/www.amazon.com\/Enchanted-Broccoli-Katzens-Classic-Paperback\/dp\/1580081266\/ref=as_li_bk_tl\/?tag=bostonzestcom-20&amp;linkId=2621da852f426befdc7b423a457fd245&amp;linkCode=ktl\" id=\"amznPsBmLink_8342923\" rel=\"nofollow\" target=\"_blank\">The Enchanted Broccoli Forest<\/a><img loading=\"lazy\" decoding=\"async\" alt=\"\" border=\"0\" height=\"0\" id=\"amznPsBmPixel_8342923\" src=\"https:\/\/ir-na.amazon-adsystem.com\/e\/ir?source=bk&amp;t=bostonzestcom-20&amp;bm-id=default&amp;l=ktl&amp;linkId=2621da852f426befdc7b423a457fd245&amp;_cb=1477258132361\" style=\"border: none !important; margin: 0px !important; padding: 0px !important; height: 0px !important; width: 0px !important;\" width=\"0\" \/> cookbook. <\/span><\/p>\n<p>It was a pumpkin filled with a mixture of rye bread, swiss cheese, onion, mustard, horseradish, and milk and then roasted in the oven until the pumpkin pulp was tender enough to scoop out with each serving. This was a mistake. The dish was so rich and filling that it should have been served alone not as part of a large holiday meal.<\/p>\n<p>Today I\u2019m more likely to serve slices of roasted pumpkin as part of a side dish of various root vegetables. Other cultures embrace this large squash as a filling diet mainstay.<\/span><\/p>\n<p>Traditional Indian cooks use pumpkin in curries. Madhur Jaffrey features a pumpkin stir-fry in her latest cookbook, <a amzn-ps-bm-asin=\"1101874864\" class=\"amzn_ps_bm_tl\" data-amzn-link-id=\"3b2d25670c2bc54e4725b756409b04fa\" data-amzn-ps-bm-keyword=\"Vegetarian India\" href=\"http:\/\/www.amazon.com\/Vegetarian-India-Journey-Through-Cooking\/dp\/1101874864\/ref=as_li_bk_tl\/?tag=bostonzestcom-20&amp;linkId=3b2d25670c2bc54e4725b756409b04fa&amp;linkCode=ktl\" id=\"amznPsBmLink_8328141\" rel=\"nofollow\" target=\"_blank\">Vegetarian India<\/a><img loading=\"lazy\" decoding=\"async\" alt=\"\" border=\"0\" height=\"0\" id=\"amznPsBmPixel_8328141\" src=\"https:\/\/ir-na.amazon-adsystem.com\/e\/ir?source=bk&amp;t=bostonzestcom-20&amp;bm-id=default&amp;l=ktl&amp;linkId=3b2d25670c2bc54e4725b756409b04fa&amp;_cb=1477258181926\" style=\"border: none !important; margin: 0px !important; padding: 0px !important; height: 0px !important; width: 0px !important;\" width=\"0\" \/>. She blooms mustard seeds, urad dal, and dried chilis for a few seconds in hot oil before adding onion and then pumpkin cubes. This hearty stew has carrots, garlic, onions, tomatoes, and chicken stock as a typical soup base. But it adds a colorful rhythm section of pumpkin, chickpeas, pears, almonds, and saffron.<\/p>\n<p><a class=\"asset-img-link\" href=\"http:\/\/bostonzest.typepad.com\/.a\/6a00e54fc42bb8883401bb09495bc9970d-popup\" onclick=\"window.open( this.href, &#39;_blank&#39;, &#39;width=640,height=480,scrollbars=no,resizable=no,toolbar=no,directories=no,location=no,menubar=no,status=no,left=0,top=0&#39; ); return false\" style=\"display: inline;\"><img decoding=\"async\" alt=\"AppHeader4\" class=\"asset  asset-image at-xid-6a00e54fc42bb8883401bb09495bc9970d img-responsive\" src=\"https:\/\/bostonzest.typepad.com\/.a\/6a00e54fc42bb8883401bb09495bc9970d-500wi\" style=\"width: 500px;\" title=\"AppHeader4\" \/><\/a><\/p>\n<p><span style=\"color: #a2a2a2;\"><em>Cambridge restaurant <a href=\"http:\/\/www.helmandrestaurantcambridge.com\/\" style=\"color: #a2a2a2;\">Helmand<\/a>&#0160;heads their appetizer menu with this tempting photo of Kaddo.<\/em><\/span><\/p>\n<p><span style=\"font-weight: 400;\">Middle Eastern cooks create Kabak Tatlisi, a pumpkin dessert. They candy the pumpkin by slowly roasting it in sugar and in its own juices. Pumpkin prepared like this is turned into <\/span><span style=\"font-weight: 400;\">Kaddo Bourani<\/span><span style=\"font-weight: 400;\"> the signature dish at the Cambridge restaurant <a href=\"http:\/\/www.helmandrestaurantcambridge.com\/\">Helmand<\/a>. They top the sweet, roasted pumpkin with a rich meat sauce and tangy yogurt.<\/span><\/p>\n<p>Gordon Hamersley has a great pumpkin, mango chutney recipe in his cookbook, <a amzn-ps-bm-asin=\"B0157JOPS6\" class=\"amzn_ps_bm_tl\" data-amzn-link-id=\"98618f4e1719edd3cb52cbac34aecd38\" data-amzn-ps-bm-keyword=\"Bistro Cooking at Home\" href=\"http:\/\/www.amazon.com\/Bistro-Cooking-Hamersley-October-Hardcover\/dp\/B0157JOPS6\/ref=as_li_bk_tl\/?tag=bostonzestcom-20&amp;linkId=98618f4e1719edd3cb52cbac34aecd38&amp;linkCode=ktl\" id=\"amznPsBmLink_7491629\" rel=\"nofollow\" target=\"_blank\">Bistro Cooking at Home<\/a><img loading=\"lazy\" decoding=\"async\" alt=\"\" border=\"0\" height=\"0\" id=\"amznPsBmPixel_7491629\" src=\"https:\/\/ir-na.amazon-adsystem.com\/e\/ir?source=bk&amp;t=bostonzestcom-20&amp;bm-id=default&amp;l=ktl&amp;linkId=98618f4e1719edd3cb52cbac34aecd38&amp;_cb=1477258266695\" style=\"border: none !important; margin: 0px !important; padding: 0px !important; height: 0px !important; width: 0px !important;\" width=\"0\" \/>. He pairs it with duck. A quick web search reveals hundreds of variations of this Indian condiment. It might be a great new holiday tradition.<\/p>\n<p>That baked pumpkin that I made for a holiday meal would make a great vegetarian alternative to turkey or ham on a holiday table for guests who prefer vegetarian food.
