And, when the end of the garden season arrives, I pick what remains to dry for use over&#0160;the winter.&#0160;<\/p>\n<p><a class=\"asset-img-link\" href=\"http:\/\/bostonzest.typepad.com\/.a\/6a00e54fc42bb8883401bb094da1aa970d-popup\" style=\"display: inline;\"><img decoding=\"async\" alt=\"Leite&#39;s sausage post\" class=\"asset  asset-image at-xid-6a00e54fc42bb8883401bb094da1aa970d img-responsive\" src=\"https:\/\/bostonzest.typepad.com\/.a\/6a00e54fc42bb8883401bb094da1aa970d-500wi\" style=\"width: 500px; border: 1px solid #C7C7C7;\" title=\"Leite&#39;s sausage post\" \/><\/a><\/p>\n<p>I was reading <a href=\"http:\/\/leitesculinaria.com\/106344\/recipes-homemade-breakfast-sausage.html\">this post over at Leite&#39;s Culinaria on homemade breakfast sausage<\/a> when I noticed the note in&#0160;the ingredient list, &quot;<span class=\"ingredient-n\">7<\/span> <span class=\"ingredient-unit\">tablespoons<\/span> <span class=\"ingredient-name\">rubbed sage (do not substitute ground sage).&quot;&#0160;<\/span><\/p>\n<p>Since I seldom use any sage other than that which I have dried and crushed myself, I did some research.<\/p>\n<p><span class=\"ingredient-name\"><a class=\"asset-img-link\" href=\"http:\/\/bostonzest.typepad.com\/.a\/6a00e54fc42bb8883401b8d23471c0970c-popup\" style=\"display: inline;\"><img decoding=\"async\" alt=\"IMG_3760\" class=\"asset  asset-image at-xid-6a00e54fc42bb8883401b8d23471c0970c img-responsive\" src=\"https:\/\/bostonzest.typepad.com\/.a\/6a00e54fc42bb8883401b8d23471c0970c-500wi\" style=\"width: 500px;\" title=\"IMG_3760\" \/><\/a><\/span><\/p>\n<p><span class=\"ingredient-name\"><a href=\"http:\/\/www.bettycrocker.com\/how-to\/ask-betty\/answer\/whats-difference-between-rubbed-sage-ground-sage\/934a4dab-220f-564d-94f0-5af4b0ec28cc\">A<\/a><\/span><a href=\"http:\/\/www.bettycrocker.com\/how-to\/ask-betty\/answer\/whats-difference-between-rubbed-sage-ground-sage\/934a4dab-220f-564d-94f0-5af4b0ec28cc\">ccording to Ask Betty Crocker<\/a>, &quot;Ground sage is made by grinding the entire leaf into a fine powder like any powdered herb. Rubbed sage is made by rubbing&#0160;dried whole sage leaves to create a light and fluffy mix. Rubbed sage is lighter and less concentrated so a teaspoon of rubbed sage will be less intense than a teaspoon of ground sage.&quot;<\/p>\n<p>It&#39;s a lesson learned, one I pass along to you. Be careful which form of dried sage you buy for your holiday meal. And, by the way, if you use dried sage, use about half as much as you would use of the fresh herb.<\/p>\n<p><a class=\"asset-img-link\" href=\"http:\/\/bostonzest.typepad.com\/.a\/6a00e54fc42bb8883401b8d2347216970c-popup\" style=\"display: inline;\"><img decoding=\"async\" alt=\"IMG_0889\" class=\"asset  asset-image at-xid-6a00e54fc42bb8883401b8d2347216970c img-responsive\" src=\"https:\/\/bostonzest.typepad.com\/.a\/6a00e54fc42bb8883401b8d2347216970c-500wi\" style=\"width: 500px;\" title=\"IMG_0889\" \/><\/a><\/p>\n<p>If you have a sage plant, you can try to keep it going inside or you can pluck the leaves, spread them on a tray, and let them dry. I usually have fresh parsley all year round but soon I&#39;ll also have a lyrical supply of sage, rosemary, and thyme.<\/p>\n<h2><strong>Favorite uses for sage!<\/strong><\/h2>\n<p>That sausage recipe sounds wonderful and I may make a big batch of that next time I have my meat grinder going.
