Pages after pages of reproduced archival materials and recipes upend the historical stereotype of black women in the kitchen as illiterate \u2018<a class=\"zem_slink\" href=\"http:\/\/en.wikipedia.org\/wiki\/Aunt_Jemima\" rel=\"wikipedia noopener noreferrer\" target=\"_blank\" title=\"Aunt Jemima\">Aunt Jemimas<\/a>,\u2019 proving how instrumental these oft-ignored chefs were to our dinners and diets.\u201d<\/p>\n<p class=\"p1\">Toni Tipton-Martin said about her research, &quot;I eventually owned nearly 300 African American cookbooks &#8230;&quot; dating back to 1827. Williams-Forson<\/a> examines the roles that chicken, both as the bird and the food, has played in the lives of black women from the past to the present. For some women, chicken led to economic freedom and independence.<\/p>\n<p class=\"p2\">This one is not a cookbook but is a fascinating read and, in some ways, connects the others on this list with one food, chicken. This connection with the food lore of the past came to my attention in a contemporary cookbook, Red Rooster by <a class=\"zem_slink\" href=\"http:\/\/amzn.to\/2l4RIGl\" rel=\"wikipedia noopener noreferrer\" target=\"_blank\" title=\"Marcus Samuelsson\">Marcus Samuelsson<\/a>.<\/p>\n<p class=\"p1\"><a class=\"asset-img-link\" href=\"http:\/\/bostonzest.typepad.com\/.a\/6a00e54fc42bb8883401bb097bc573970d-popup\" onclick=\"window.open( this.href, &#39;_blank&#39;, &#39;width=640,height=480,scrollbars=no,resizable=no,toolbar=no,directories=no,location=no,menubar=no,status=no,left=0,top=0&#39; ); return false\" style=\"display: inline;\"><img decoding=\"async\" alt=\"Red-rooster-cover[1]\" class=\"asset  asset-image at-xid-6a00e54fc42bb8883401bb097bc573970d img-responsive\" src=\"https:\/\/bostonzest.typepad.com\/.a\/6a00e54fc42bb8883401bb097bc573970d-500wi\" style=\"width: 500px;\" title=\"Red-rooster-cover[1]\" \/><\/a><\/p>\n<p class=\"p1\"><a href=\"http:\/\/amzn.to\/2lDlKUX\">The Red Rooster Cookbook: The Story of Food and Hustle in Harlem<\/a><\/p>\n<p class=\"p1\">Samuelsson\u2019s cookbook is about far more than recipes, just as his Harlem restaurant Red Rooster is as much about community as it is about food. Each section begins with an essay about some aspect of the multi-dimensional mission that Red Rooster represents to him and his team.<\/p>\n<p class=\"p1\">Chicken plays a starring role in his restaurant and his book as he tells of his two year obsession with creating the perfect fried chicken dish that would be worthy of the Harlem chicken tradition.<\/p>\n<p class=\"p1\">In an interesting connection to the The Jemima Code, the basement supper club is named Ginny\u2019s after a woman from Harlem who worked for his partner\u2019s family. He wants it to be a place where all the Ginnys would feel welcome.<\/p>\n<p class=\"p1\"><a class=\"asset-img-link\" href=\"http:\/\/bostonzest.typepad.com\/.a\/6a00e54fc42bb8883401bb097bc677970d-popup\" onclick=\"window.open( this.href, &#39;_blank&#39;, &#39;width=640,height=480,scrollbars=no,resizable=no,toolbar=no,directories=no,location=no,menubar=no,status=no,left=0,top=0&#39; ); return false\" style=\"display: inline;\"><img decoding=\"async\" alt=\"Jessica harris\" class=\"asset  asset-image at-xid-6a00e54fc42bb8883401bb097bc677970d img-responsive\" src=\"https:\/\/bostonzest.typepad.com\/.a\/6a00e54fc42bb8883401bb097bc677970d-500wi\" style=\"width: 500px;\" title=\"Jessica harris\" \/><\/a><\/p>\n<p class=\"p1\"><strong>Jessica Harris<\/strong><\/p>\n<p class=\"p3\"><span class=\"s1\">My first education on <\/span>foods and foodways of the African Diaspora came from a class that I took with <a href=\"http:\/\/amzn.to\/2lDqtWL\">Doctor Jessica Harris.<\/a> She has authored twelve books on the topic. For the purpose of this list, I would suggest you read two of her books. \u201c<a href=\"http:\/\/amzn.to\/2lJ5CBD\">Iron Pots and Wooden Spoons: Africa&#39;s Gifts to New World Cooking&quot;<\/a>&#0160;and \u201c<a href=\"http:\/\/amzn.to\/2l4Su6h\">The Welcome Table: African American Heritage Cooking<\/a>\u201d comprise a well-researched collection of recipes.<\/p>\n<p class=\"p4\"><a class=\"asset-img-link\" href=\"http:\/\/bostonzest.typepad.com\/.a\/6a00e54fc42bb8883401bb097bc632970d-popup\" onclick=\"window.open( this.href, &#39;_blank&#39;, &#39;width=640,height=480,scrollbars=no,resizable=no,toolbar=no,directories=no,location=no,menubar=no,status=no,left=0,top=0&#39; ); return false\" style=\"display: inline;\"><img decoding=\"async\" alt=\"EDNA LEWIS\" class=\"asset  asset-image at-xid-6a00e54fc42bb8883401bb097bc632970d img-responsive\" src=\"https:\/\/bostonzest.typepad.com\/.a\/6a00e54fc42bb8883401bb097bc632970d-500wi\" style=\"width: 500px;\" title=\"EDNA LEWIS\" \/><\/a><\/p>\n<p class=\"p3\"><strong><a class=\"zem_slink\" href=\"http:\/\/en.wikipedia.org\/wiki\/Edna_Lewis\" rel=\"wikipedia noopener noreferrer\" target=\"_blank\" title=\"Edna Lewis\">Edna Lewis<\/a><\/strong><\/p>\n<p class=\"p1\">No list on this topic would be complete without a book by chef and food writer <a href=\"http:\/\/amzn.to\/2miXCDZ\">Edna Lewis<\/a>. Her New York Times obituary recalled an earlier interview in which she said, &quot;As a child in Virginia, I thought all food tasted delicious. After growing up, I didn&#39;t think food tasted the same, so it has been my lifelong effort to try and recapture those good flavors of the past.&quot; With this in mind, I suggest you read her book, \u201c<a href=\"http:\/\/amzn.to\/2miY05J\">The Taste of Country Cooking<\/a>.\u201d<\/p>\n<p class=\"p1\"><a class=\"asset-img-link\" href=\"http:\/\/bostonzest.typepad.com\/.a\/6a00e54fc42bb8883401b7c8d89a8b970b-popup\" onclick=\"window.open( this.href, &#39;_blank&#39;, &#39;width=640,height=480,scrollbars=no,resizable=no,toolbar=no,directories=no,location=no,menubar=no,status=no,left=0,top=0&#39; ); return false\" style=\"display: inline;\"><img decoding=\"async\" alt=\"Unspecified\" class=\"asset  asset-image at-xid-6a00e54fc42bb8883401b7c8d89a8b970b img-responsive\" src=\"https:\/\/bostonzest.typepad.com\/.a\/6a00e54fc42bb8883401b7c8d89a8b970b-500wi\" style=\"width: 500px;\" title=\"Unspecified\" \/><\/a><\/p>\n<p class=\"p1\">While this column was introduced as a reading list, it is also a cooking list, and I hope you will try some of the recipes and\/or menus you come across.
