I want all that flavor on our plates not tossed away in the cooking water! But recently, I saw an&nbsp;<a href=\"http:\/\/www.americastestkitchenfeed.com\/super-quick-video-tips\/2012\/06\/the-easiest-ever-way-to-shuck-corn-video\/?utm_source=rss&amp;utm_medium=rss&amp;utm_campaign=the-easiest-ever-way-to-shuck-corn-video\" target=\"_self\">America&#8217;s Test Kitchen video<\/a>&nbsp;on how to microwave corn &#8220;in the husk&#8221; that results in perfectly silk-free ears on the plate<\/p>\n<p>When I told friends, they laughed because most of them had been microwaving corn for years. (As you can see, I don&#8217;t think microwave when it comes to cooking.) But most of them had also been husking the corn before they cooked it, so they did find the video helpful.<\/p>\n<p><strong>Grilled Corn &amp; Elote<\/strong><\/p>\n<p>If the resident grill master is making supper, you can toss the corn (husk and all) right on the grill and get some of that lovely pop-corney caramelization going. We don&#8217;t have a safe grill space so I used a combo method to make the <a class=\"zem_slink\" title=\"Elote\" href=\"http:\/\/en.wikipedia.org\/wiki\/Elote\" rel=\"wikipedia\" target=\"_blank\">elote<\/a> in the photo.<\/p>\n<p>Elote is a favorite Mexican street food that has been showing up in Boston restaurants. A very popular version is served at <a href=\"http:\/\/toro-restaurant.com\/\" target=\"_self\">Toro <\/a>in the South End. There, it&#8217;s called &#8220;Maiz Asado con Alioli y queso Cotija.&#8221;<\/p>\n<p>To make my version, I microwaved the corn for 2 minutes an ear (following the method in the video) and then popped the cleaned ears into a cast iron skillet to give them some color. I cut the ears in half for easier eating and stuck each half with a wooden chopstick.<\/p>\n<p><a class=\"asset-img-link\" style=\"display: inline;\" onclick=\"window.open( this.href, '_blank', 'width=640,height=480,scrollbars=no,resizable=no,toolbar=no,directories=no,location=no,menubar=no,status=no,left=0,top=0' ); return false\" href=\"http:\/\/bostonzest.typepad.com\/.a\/6a00e54fc42bb888340167690cd3a3970b-popup\"><img decoding=\"async\" class=\"asset asset-image at-xid-6a00e54fc42bb888340167690cd3a3970b\" style=\"width: 500px;\" title=\"PMC_5828 - Version 22012-08-01-sweet-corn-elote-grilled-cheese-chopsticks-\u00a9 2011 Penny Cherubino\" src=\"https:\/\/bostonzest.typepad.com\/.a\/6a00e54fc42bb888340167690cd3a3970b-500wi\" alt=\"PMC_5828 - Version 22012-08-01-sweet-corn-elote-grilled-cheese-chopsticks-\u00a9 2011 Penny Cherubino\" \/><\/a><\/p>\n<p>Then come the toppings. Around here, most places seem to slather the corn in mayonnaise and then season. But in different Mexican cultural regions you might use butter, sour cream, crema, or citrus juice to moisten the ear.<\/p>\n<p>Once you have a wet surface, you can add a Mexican cheese like crumbly <a href=\"http:\/\/en.wikipedia.org\/wiki\/A%C3%B1ejo_cheese\" target=\"_self\">Cotija Anejo<\/a>, or substitute your favorite grated <a href=\"http:\/\/en.wikipedia.org\/wiki\/Cheddar\" target=\"_self\">cheddar<\/a>, <a class=\"zem_slink\" title=\"Parmigiano-Reggiano\" href=\"http:\/\/en.wikipedia.org\/wiki\/Parmigiano-Reggiano\" rel=\"wikipedia\" target=\"_blank\">Parmigiano-Reggiano<\/a>, or a nice salty <a href=\"http:\/\/en.wikipedia.org\/wiki\/Feta\" target=\"_self\">feta.<\/a> Seasoning is the final step and that can include anything from salt to chili powder. I love a bit of smoky <a class=\"zem_slink\" title=\"Poblano\" href=\"http:\/\/en.wikipedia.org\/wiki\/Poblano\" rel=\"wikipedia\" target=\"_blank\">ancho chili<\/a> powder on mine!
