Today, we&#8217;re posting it anew so that a recent generation of BostonZest readers can try it out.&nbsp;<\/p>\n<p><a class=\"asset-img-link\" style=\"display: inline;\" onclick=\"window.open( this.href, '_blank', 'width=640,height=480,scrollbars=no,resizable=no,toolbar=no,directories=no,location=no,menubar=no,status=no,left=0,top=0' ); return false\" href=\"http:\/\/bostonzest.typepad.com\/.a\/6a00e54fc42bb8883401901e702841970b-popup\"><img decoding=\"async\" class=\"asset asset-image at-xid-6a00e54fc42bb8883401901e702841970b\" style=\"width: 500px;\" title=\"6a00e54fc42bb8883400e553f3dbd88834-800wi\" src=\"https:\/\/bostonzest.typepad.com\/.a\/6a00e54fc42bb8883401901e702841970b-500wi\" alt=\"6a00e54fc42bb8883400e553f3dbd88834-800wi\" \/><\/a><\/p>\n<p><strong>Farmer\u2019s Market Pasta<\/strong><\/p>\n<p>When summer tomatoes and corn are at their best, let them star in this simple, uncooked sauce. You&#8217;ll be surprised at how creamy and rich it tastes.<\/p>\n<p><em><strong>For the sauce:<\/strong><\/em><\/p>\n<ul>\n<li>2 or 3 large, ripe tomatoes chopped into 1\/2\u201d cubes. (If you find heirloom tomatoes of different colors it will make a prettier pasta. The version in the photo has red, yellow, and green heirloom tomatoes.)<\/li>\n<li>1\/2 cup of olives pitted and chopped roughly. (Kalamatra olives are fine or if you can find a mix of green and black olives in the deli case, they would be perfect. That\u2019s what I use. If they are in herb seasoning, so much the better)<\/li>\n<li>2 to 4 large, fresh basil leaves sliced into chiffonade<span id=\"gtbmisp_12\" style=\"border: 0pt none; margin: 0pt; padding: 0pt; background: transparent none repeat scroll 0% 0%; font-family: serif; font-style: normal; font-variant: normal; font-weight: bold; font-size: 100%; line-height: normal; font-size-adjust: none; position: static; text-align: left; text-indent: 0pt; text-transform: none; color: red; text-decoration: underline; cursor: pointer;\">&nbsp;<\/span> (very thin strips)<\/li>\n<li>1 cup of sweet corn kernels (fresh or frozen)<\/li>\n<li>2 or 3 scallions sliced into thin rings<\/li>\n<li>2 or 3 sprigs of parsley chopped<\/li>\n<li>1 small clove of garlic minced<\/li>\n<li>3 tablespoons of extra virgin olive oil<\/li>\n<li>Fresh ground black pepper and salt to taste<\/li>\n<li>4 ounces of goat cheese crumbled (One of my recipe testers, cj in Michigan used feta cheese and Kathie in Illinois tried it with Boursin.) Try any soft cheese you like if you don\u2019t like goat cheese. )<\/li>\n<\/ul>\n<p>Toss all of the sauce ingredients in a large bowl and set aside. This may be made a couple of hours ahead, making this a great dish for entertaining.<\/p>\n<p><em><strong>For the Pasta:<\/strong><\/em><\/p>\n<ul>\n<li>8 oz. dry pasta cooked in salted water according to package directions. We like small shells or orecchiette but any shaped pasta that will help scoop up the sauce is good.<\/li>\n<li>Drain the pasta but don\u2019t worry about shaking off all the water, it will help form the sauce. (I usually scoop out a cup of the hot pasta water before I drain the pasta just to be sure I have some if the mixture looks a tad dry.)<\/li>\n<\/ul>\n<p><a class=\"asset-img-link\" style=\"display: inline;\" onclick=\"window.open( this.href, '_blank', 'width=640,height=480,scrollbars=no,resizable=no,toolbar=no,directories=no,location=no,menubar=no,status=no,left=0,top=0' ); return false\" href=\"http:\/\/bostonzest.typepad.com\/.a\/6a00e54fc42bb8883401901e702978970b-popup\"><img decoding=\"async\" class=\"asset asset-image at-xid-6a00e54fc42bb8883401901e702978970b\" style=\"width: 500px;\" title=\"6a00e54fc42bb8883400e553d817598833-800wi\" src=\"https:\/\/bostonzest.typepad.com\/.a\/6a00e54fc42bb8883401901e702978970b-500wi\" alt=\"6a00e54fc42bb8883400e553d817598833-800wi\" \/><\/a><\/p>\n<p>Toss the pasta with the tomato mixture adding some of the reserved pasta water if needed to form a light, creamy sauce. Serve family-style in a big bowl or plate in individual soup or pasta bowls.<\/p>\n<p><em><strong>Garnish (optional)<\/strong><\/em><\/p>\n<p>Garnish each serving with a few basil leaves and, if you like, pass a chunk of Parmigiano Reggiano around the table and let each person grate their own.<\/p>\n<p><strong>Note<\/strong>: Today I took a bit of a short cut that added a big taste to this recipe. Instead of plain goat cheese, I bought a marinated goat cheese from <a href=\"http:\/\/www.crystalbrookfarm.com\/\" target=\"_self\">Crystal Brook Farm<\/a> at the <a href=\"https:\/\/www.facebook.com\/CopleySquareFarmersMarket\" target=\"_self\">Copley Square Farmers&#8217; Market.<\/a> This already had olive oil, garlic herbs, and pepper.<\/p>\n<p>I prepped my heirloom tomatoes and corn from <a href=\"http:\/\/stillmansfarm.com\/\" target=\"_self\">Stillman&#8217;s Farm<\/a>, chopped more heirloom tomatoes, parsley, basil, and garlic from <a href=\"http:\/\/www.atlasfarm.com\/\" target=\"_self\">Atlas Farm<\/a>, and the result was absolutely delicious.<\/p>\n<p>This is a recipe that encourages improvisation.
