This classic but adaptable vegetable soup seems to have slipped off menus and off the radar of home cooks like me. A soup for all eaters! <\/em><\/span><span style=\"color: #8b8b8b;\"><em>(photo credit: Jacqueline Church)<\/em><\/span><\/span><\/p>\n<h2><strong>Great Minds \u2026<\/strong><\/h2>\n<p><span style=\"font-weight: 400;\">Food writer <a href=\"https:\/\/www.theguardian.com\/lifeandstyle\/2017\/feb\/28\/italian-minestrone-soup-recipe-rachel-roddy-a-kitchen-in-rome\">Rachel Roddy featured minestrone in one of her recent columns for the Guardian.<\/a> She wrote that minestrone, \u201c&#8230; sums up the Italian knack for taking the most basic and economic ingredients and bringing them together in a delicious way.\u201d She referred to her trusted Italian food experts, like Marcella Hazan, when writing about all the regional and seasonal variations on this pot of goodness.<\/span><\/p>\n<p><span style=\"font-weight: 400;\"><a href=\"https:\/\/www.amazon.com\/My-Kitchen-Rome-Recipes-Italian-ebook\/dp\/B011J4H1LG\/ref=as_li_ss_il?ie=UTF8&amp;qid=1493995066&amp;sr=8-1&amp;keywords=rachel+roddy+five+quarters&amp;linkCode=li3&amp;tag=bostonzestcom-20&amp;linkId=80ab01682109f08e59730f42e7ac62c3\" rel=\"noopener noreferrer\" target=\"_blank\"><img decoding=\"async\" border=\"0\" src=\"\/\/ws-na.amazon-adsystem.com\/widgets\/q?_encoding=UTF8&amp;ASIN=B011J4H1LG&amp;Format=_SL250_&amp;ID=AsinImage&amp;MarketPlace=US&amp;ServiceVersion=20070822&amp;WS=1&amp;tag=bostonzestcom-20\" \/><\/a><img loading=\"lazy\" decoding=\"async\" alt=\"\" border=\"0\" height=\"1\" src=\"https:\/\/ir-na.amazon-adsystem.com\/e\/ir?t=bostonzestcom-20&amp;l=li3&amp;o=1&amp;a=B011J4H1LG\" style=\"border: none !important; margin: 0px !important;\" width=\"1\" \/>&#0160;<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Roddy&#39;s book <a href=\"http:\/\/amzn.to\/2pOeXKj\">My Kitchen in Rome: Recipes and Notes on Italian Cooking<\/a>&#0160;is one of my favorite cookbooks from the past year.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">From my own bookshelf, I reached for <a href=\"http:\/\/amzn.to\/2pO9BPa\">Lynne Rossetto Kasper\u2019s \u201cThe Italian Country Table\u201d<\/a> and found a summer minestrone that she says should be served at room temperature. This was followed by her more traditional recipe for the soup with serving variations and a brilliant two-page spread of tips for perfecting your own pot of vegetables and broth. &#0160;<\/span><\/p>\n<h2>&quot;Eating Down the Fridge\u2019 Meal &#8230;&quot;<\/h2>\n<p>A few days later, <a href=\"http:\/\/www.jacquelinechurch.com\/\">Jacqueline Church, culinary instructor at Brookline Adult &amp; Community Education and private cooking coach<\/a>, posted a photo of a steaming pot of vegan minestrone on her Facebook feed. Since I always seem to learn something new from this food educator, I asked her what she loves about this soup.<\/p>\n<p><span style=\"font-weight: 400;\">Her answer was, \u201cIt&#39;s perfect for an \u2018eating down the fridge\u2019 meal, key ingredients can be kept on hand in the pantry: box or can of beans, dried porcini, handful of pasta, can or box of tomatoes. In the fridge, we almost always have carrots, celery, onion. Add a bit of cabbage languishing in the bin, some seasonal squash (zucchini in the summer, butternut in the winter) a few potatoes. With kidney beans and porcini you&#39;ve got umami (strain the soaking liquid and add that) so the whole thing can be customized to what you have on hand. Hearty and satisfying, it may be the ultimate comfort food!\u201d<\/span><\/p>\n<p>&#0160; <a class=\"asset-img-link\" href=\"http:\/\/bostonzest.typepad.com\/.a\/6a00e54fc42bb8883401b7c8f52993970b-popup\" onclick=\"window.open( this.href, &#39;_blank&#39;, &#39;width=640,height=480,scrollbars=no,resizable=no,toolbar=no,directories=no,location=no,menubar=no,status=no,left=0,top=0&#39; ); return false\" style=\"display: inline;\"><img decoding=\"async\" alt=\"IMG_8409\" class=\"asset  asset-image at-xid-6a00e54fc42bb8883401b7c8f52993970b img-responsive\" src=\"https:\/\/bostonzest.typepad.com\/.a\/6a00e54fc42bb8883401b7c8f52993970b-500wi\" style=\"width: 500px; border: 1px solid #EEEBEB;\" title=\"IMG_8409\" \/><\/a>&#0160;<\/p>\n<p>Finally, one of the chilly days we spent in Provincetown recently was warmed by a &quot;Spring Minestrone&quot; with chard, peas, carrots, and chicken from the wonderful food team at <a href=\"http:\/\/www.thecanteenptown.com\/\">The Canteen.<\/a><\/p>\n<p><strong><a class=\"asset-img-link\" href=\"http:\/\/bostonzest.typepad.com\/.a\/6a00e54fc42bb8883401bb09982faf970d-popup\" onclick=\"window.open( this.href, &#39;_blank&#39;, &#39;width=640,height=480,scrollbars=no,resizable=no,toolbar=no,directories=no,location=no,menubar=no,status=no,left=0,top=0&#39; ); return false\" style=\"display: inline;\"><img decoding=\"async\" alt=\"IMG_8414\" class=\"asset  asset-image at-xid-6a00e54fc42bb8883401bb09982faf970d img-responsive\" src=\"https:\/\/bostonzest.typepad.com\/.a\/6a00e54fc42bb8883401bb09982faf970d-500wi\" style=\"width: 500px;\" title=\"IMG_8414\" \/><\/a><\/strong><\/p>\n<h2><strong>Learning Experience<\/strong><\/h2>\n<p><span style=\"font-weight: 400;\">This is also an excellent soup for cooks to learn basic skills. Roddy writes, \u201cMinestrone is made with a staggered march into the pan. By adding the ingredients gradually you lay down foundations of flavour, one thing sizzling gently while you chop the next. Once everything is in the pan \u2013 including the marvellous, umami parmesan rind if you have one \u2013 let everything simmer, slowly, until the flavours have come together.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The Italians call this process, \u201c<a href=\"https:\/\/en.wiktionary.org\/wiki\/insaporire\">insaporire<\/a>\u201d which sort of translates to \u201cmaking tasty.\u201d <a href=\"http:\/\/amzn.to\/2p4B53S\">Marcella Hazan<\/a> describes it as drawing out the flavor of an ingredient or set of ingredients before adding the next one. It\u2019s like sweating onions, celery, and carrots in oil before adding broth or meat.<\/span><\/p>\n<h2><strong>Big Soup!<\/strong><\/h2>\n<p><span style=\"font-weight: 400;\">Perhaps restaurants found that if customers ordered a bowl of minestrone, they filled up on it and didn\u2019t order much food to follow. In Italian the word for soup is minestra. The suffix \u201c-one\u201d adds the concept of \u201cbig.\u201d Therefore minestrone means big soup. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">But that doesn&#39;t mean it has to be a heavy, wintertime soup. Perhaps this is the time of year for a green minestrone. I found <a href=\"http:\/\/www.foodandwine.com\/recipes\/spring-minestrone\">Joanne Weir\u2019s recipe for that in Food and Wine.<\/a> She uses many of the first green vegetables we find at the farmers markets.
