They make me think of days on the beach digging softshell clams. I remember, as a kid, opening small clams on our boat with my <a class=\"amzn_ps_bm_tl\" data-amzn-link-id=\"9e54014dfd3f3138c66b51fd152e11ad\" data-amzn-ps-bm-keyword=\"clam knife\" href=\"http:\/\/www.amazon.com\/OXO-Good-Grips-Clam-Knife\/dp\/B00004OCLD\/ref=as_li_bk_tl\/?tag=bostonzestcom-20&amp;linkId=9e54014dfd3f3138c66b51fd152e11ad&amp;linkCode=ktl\" id=\"amznPsBmLink_1406636\" rel=\"nofollow\" target=\"_blank\">clam knife<\/a><img loading=\"lazy\" decoding=\"async\" alt=\"\" border=\"0\" height=\"0\" id=\"amznPsBmPixel_1406636\" src=\"https:\/\/ir-na.amazon-adsystem.com\/e\/ir?source=bk&amp;t=bostonzestcom-20&amp;bm-id=default&amp;l=ktl&amp;linkId=9e54014dfd3f3138c66b51fd152e11ad&amp;_cb=1440612292365\" style=\"border: none !important; margin: 0px !important; padding: 0px !important; height: 0px !important; width: 0px !important;\" width=\"0\" \/> and passing them to my father to enjoy while he and my uncles dug bushels of the larger quahogs that would become part of our frozen winter seafood supply.&#0160;<\/p>\n<p><a class=\"asset-img-link\" href=\"http:\/\/bostonzest.typepad.com\/.a\/6a00e54fc42bb8883401bb08662a4c970d-popup\" onclick=\"window.open( this.href, &#39;_blank&#39;, &#39;width=640,height=480,scrollbars=no,resizable=no,toolbar=no,directories=no,location=no,menubar=no,status=no,left=0,top=0&#39; ); return false\" style=\"display: inline;\"><img decoding=\"async\" alt=\"7395921930_2cffb98b21_z\" class=\"asset  asset-image at-xid-6a00e54fc42bb8883401bb08662a4c970d img-responsive\" src=\"https:\/\/bostonzest.typepad.com\/.a\/6a00e54fc42bb8883401bb08662a4c970d-500wi\" style=\"width: 500px;\" title=\"7395921930_2cffb98b21_z\" \/><\/a><\/p>\n<p><span style=\"color: #888888;\"><em>From&#0160;the Boston Public Library, Leslie Jones Collection, a <\/em><\/span><em><a href=\"https:\/\/www.flickr.com\/photos\/boston_public_library\/7395921930\" target=\"_self\">No Digging Clam Sign<\/a><\/em><span style=\"color: #888888;\"><em> from&#0160;1934 &#8211; 1956.<\/em><\/span><\/p>\n<p>Aside from shucking, my job was to sort and test the clams with a ring to be sure <a href=\"http:\/\/www.mass.gov\/eea\/agencies\/dfg\/dmf\/laws-and-regulations\/recreational-regulations\/\" target=\"_self\">they were all of legal size.<\/a> Clams are one of the easier foods to forage, but you do need a license from the local city or town where you will be digging and to know the size and daily catch limits. You should also check with the local shellfish&#0160;authorities daily to be certain shellfish from that area are safe to eat. &#0160;<\/p>\n<p><a class=\"asset-img-link\" href=\"http:\/\/bostonzest.typepad.com\/.a\/6a00e54fc42bb8883401bb08679449970d-popup\" onclick=\"window.open( this.href, &#39;_blank&#39;, &#39;width=640,height=480,scrollbars=no,resizable=no,toolbar=no,directories=no,location=no,menubar=no,status=no,left=0,top=0&#39; ); return false\" style=\"display: inline;\"><img decoding=\"async\" alt=\"IMG_3293 countneck - Version 22015-07-31-new-deal-seafood-fish-clams-countneck-\u00a9 2014 Penny Cherubino\" class=\"asset  asset-image at-xid-6a00e54fc42bb8883401bb08679449970d img-responsive\" src=\"https:\/\/bostonzest.typepad.com\/.a\/6a00e54fc42bb8883401bb08679449970d-500wi\" style=\"width: 500px; border: 1px solid #ECEBEB;\" title=\"IMG_3293 countneck - Version 22015-07-31-new-deal-seafood-fish-clams-countneck-\u00a9 2014 Penny Cherubino\" \/><\/a><\/p>\n<p><strong>New England Clams<\/strong><\/p>\n<p>Our local names for clams can be confusing to visitors. We call the soft shell clams with the long, protruding siphon a steamer, and the middle size hard shell clam a littleneck. <a href=\"https:\/\/en.wikipedia.org\/wiki\/Hard_clam\" target=\"_self\">Wikipedia explains the grades,<\/a> \u201cThe smallest legally harvestable clams are called&#0160;<strong>countnecks<\/strong>, next size up are&#0160;<strong>littlenecks<\/strong>, then&#0160;<strong>topnecks<\/strong>. Above that are the&#0160;<strong>cherrystones<\/strong>, and the largest are called&#0160;<strong>quahogs<\/strong>&#0160;or&#0160;<strong>chowder clams<\/strong>.\u201d<\/p>\n<p><a href=\"https:\/\/en.wikipedia.org\/wiki\/Atlantic_jackknife_clam\" target=\"_self\">Razor clams<\/a>&#0160;or as they are officially know Atlantic Jackknife Clams&#0160;have been gaining popularity, but I find they need a really skillful hand to prepare. It\u2019s not something I would tackle at home.&#0160;<\/p>\n<p>The very large <a href=\"https:\/\/en.wikipedia.org\/wiki\/Atlantic_surf_clam\" target=\"_self\">surf clam<\/a> that was used to make Howard Johnson\u2019s famous clam strips is found today in some chowders and sushi.<\/p>\n<p><a class=\"asset-img-link\" href=\"http:\/\/bostonzest.typepad.com\/.a\/6a00e54fc42bb8883401bb08662e18970d-popup\" onclick=\"window.open( this.href, &#39;_blank&#39;, &#39;width=640,height=480,scrollbars=no,resizable=no,toolbar=no,directories=no,location=no,menubar=no,status=no,left=0,top=0&#39; ); return false\" style=\"display: inline;\"><img decoding=\"async\" alt=\"6284514900_7a343fd133_z\" class=\"asset  asset-image at-xid-6a00e54fc42bb8883401bb08662e18970d img-responsive\" src=\"https:\/\/bostonzest.typepad.com\/.a\/6a00e54fc42bb8883401bb08662e18970d-500wi\" style=\"width: 500px;\" title=\"6284514900_7a343fd133_z\" \/><\/a><\/p>\n<p><span style=\"color: #888888;\"><em><a href=\"https:\/\/www.flickr.com\/photos\/boston_public_library\/6284514900\/\" target=\"_self\">Howard Johnson&#39;s postcard<\/a> from&#0160;the Boston Public Library&#0160;Tichnor Bros. One dish that I often find myself wanting is Clams Al Forno \u2013 a wonderful dish of littlenecks roasted in their shells and topped with a mixture of chopped tomatoes, sliced onion, chopped garlic, jalape\u00f1o, red pepper flakes, white wine, and butter.
