  • Clear Flour German Rye

    We have set ourselves a quest to try all the rye breads on Clear Flour Bread's list. We started last week with a loaf of their German Rye.

    Here's the German Rye which they describe as, "… a hearty and moist whole grain rye with a touch of honey." We describe it as full of rye flavor with an incredible aroma, crust with a bit of chew, and a lovely crumb.

    It's a great bread to have with cheese or toasted with a bit of butter and a bit of preserves. We went with apricot!

    It also made an appealing base for an open-faced egg salad supper.

    Our eggs are chopped with a handy egg cutter (like this one) then mixed with crème fraîche, celery, scallion, curry powder, salt, and a bit of aleppo pepper.

    Always ask, because Clear Flour may have a bread that is not on the usual list. They do make seasonal breads, and I think they occasionally make something special, just because they feel like it. That's the beauty of patronizing a small, artisan business. 

    You'll also find that they can tell you more about each bread than the simple description on the list.

    Pay attention to when each bread is available and schedule your visits to the bakery around what you want to buy.

  • Otto Pizza, Coolidge Corner: Our First Look (At This Location)

    We love Otto Pizza and were so happy about the arrival of their first sit-down dining spot in the Boston area, that we rushed over to Brookline on Friday to enjoy a few opening day slices.

    Mashed potato, bacon, and scallion – Genoa salami, tomato, and scallion.

    Yes, there is a bite out of the "mashed potato, bacon, and scallion" slice. Penny, who normally doesn't eat the crust of her pizza, ripped off a corner and was chomping on it before anyone could grab a photo. That says a lot about the quality of the Otto crust. We think that without great crust, you can't have great pizza.

    The newest Otto Pizza is one block from the Coolidge Corner stop on the Green line, across from the Coolidge Corner Theatre. (Now isn't that handy?)

    This corner location has large, arched windows that fill the space with light, and high ceilings that make the room seem far bigger than it is. The user-friendly design accomodates customers who want to dine-in with table service, order a slice and drink at the bar, or anyone who prefers to grab a slice and sit along a counter. You can even stand at a giant beam along the Harvard Ave window "people watching" while you eat.

    We always have to start with the mashed potato, bacon, and scallion. This is one of many white (meaning without red sauce) pizzas on the menu, and we both love this combination of flavors. Next up was the Genoa salami, tomato, and scallion. And, we finished with the butternut squash, ricotta, and cranberry which we think of as a dessert pizza.

  • Poached Chicken is a Cook’s Treasure

    Poached chicken is something you will often find in our refrigerator, especially when we're busy. It doesn't take long to poach a whole bird, chicken parts on the bone, or boneless chicken. You can poach it in water and aromatic vegetables. But for the bonus of a super rich chicken stock, start with a low-sodium chicken broth.

    Here are a link for learning how to poach a chicken. I use the Chinese White Chicken method.

    Once cooked, you can turn the chicken and broth into chicken soup. Here's how we deal with that option. Variations on a Soup theme

    Of course, you or your household guests could turn sliced chicken into a wonderful array of chicken sandwiches. We recommend you grab a loaf of When Pigs Fly Bakery's "Savory Cranberry" bread, or as we call it, "Stuffing Bread." It tastes just like a favorite holiday bread stuffing and makes a great sandwich with some swiss cheese, chicken, and a dab of spicy cranberry chutney.

    Then, there are salads. We're not mayo fans, so we turn our poached chicken into a Curried Chicken Salad with an oil and vinegar dressing. But, traditional chicken salad may be exactly what your family will welcome.

    And, from there, you can let your imagination fly. Stir fry some veggies and toss in the chicken to warm it. Heat up some pasta sauce and make a quick chicken sauce. 

    We even make poached chicken for our favorite pup when she's not feeling peckish and we need to tempt her with something special. She loves it.

    A heavy pot like a Le Creuset Enameled Cast-Iron French Oven is perfect for poaching chicken.
