  • Make a North End Muffuletta

    Sometimes we eat something delicious because we need that particular item for a photo shoot. That was the case of a recent muffuletta adventure. For a recipe we turned to our old friends at Serious Eats. (How to Make Classic New Orleans Muffulettas.)

    (Note: We've seen more than one spelling for the name of this sandwich, but we're going with Muffuletta as used by Central Grocery in New Orleans, "home of the original Muffuletta.")

    Here is our version, before pressing. We were pretty pleased with the result. Naturally, there are things we would do a bit differently (more oil in the olive salad) next time, but it was delicious! This was part of a newspaper column we were doing on "Sandwiches for a Crowd."

    Finding the Bread

    Over on Serious Eats, Kenji wrote, "This is the only ingredient that is truly difficult to source outside of New Orleans." Penny remembered  Scali bread at Bova's Bakery in the North End that seemed to fit the specs. So off we went to the perfect neighborhood for gathering muffuletta ingredients.

    They not only had it but, as you can see, had it in two sizes. Since this sandwich was for a small group, we picked the smaller loaf, but for you the bigger one might be a better fit.

    Slicing Up the Filling!

    For the filling we walked over to Salumeria Italiana. We knew they would have the meat, cheese, and makings of the olive salad. They thinly sliced everything we needed for perfect stacking.

    We bought mortadella, provolone, fennel soppressata, hot capocollo, and, for our own touch and a light color in the center, added a bit of porchetta. The containers hold olives and the pickled vegetables that make up the olive salad.

    Step one is to chop those with some capers, mix with olive oil, and spread it on the bread. This is even better when you make it ahead and give the ingredients time to mellow and blend.

    Next, stack the meat in layers.

    Wrap the sandwich, weigh it down, move it to the refrigerator, and let a few hours do their magic.

    We mentioned above that this is a sandwich for a crowd. You can make as many as you need. Prepare the salad ahead, assemble, and weigh-down the beast long before your guests arrive.

    Then serve it up on a cutting board and let everyone slice off the size piece they would like. Easy for entertaining, a fall picnic, or to bring to a potluck.

  • Seafood Feast for Christmas Eve

    While you may think of lobster as summer fare, around our house it's a Christmas Eve tradition. Think about it, the reason Maine Lobster is so good is those freezing cold waters that make swimming from Maine’s ocean beaches a shocking experience. This time of year, water temperatures drop throughout our area and lobsters have better flavor. 

    Our Lobsters will come from James Hook & Company (below) on the Waterfront.

    Feast of the Seven Fishes

    For many Italian families, the Christmas Eve Feast of the Seven Fishes, or La Vigilia di Natale, is a tradition. And, because preparing this meal at home can be daunting for the cook, it’s a good time to invite guests who will bring a dish or help in the kitchen – especially if your family’s version actually calls for 9, 11, or 13 fishes.

    Get the Salt Cod Early

    One element of most traditional Christmas Eve feasts is salt cod or baccalà. This is the one product you need to buy right away. Soaking it, to rehydrate and remove the salt, can be a long process and is best begun at least a couple of days before you plan to use it. 

    We’ve purchased excellent salt cod from Salumeria Italiana in the North End. Baccalà is one of those products you want to buy from a trusted specialty shop or fishmonger. There's a very wide range of salt cod quality and if this is for a special occasion, why not buy from someone who's made sure you will have the best. 

    There was a discussion with Boston Chowhounds about a good place to buy salt cod, earlier this year. Lots of good advice there.

    Join a Restaurant Feast

    For the non-cooks, there are area restaurants serving their versions of the feast this year. Grotto in Beacon Hill has had rave reviews of their special feast menu in past years. Sister restaurant Marliave is also joining in the feasting with their own version.

    Other places for fish feasting are Dante in Cambridge, Davio’s in the Theatre District, and Legal Harborside out in the Seaport area. The North End’s Neptune Oyster is doing it tonight (12.20.12) for those who have to be elsewhere on Christmas Eve. For all these places, reservations are recommended.

    Upddate 12.20.12 one of our favorite places, Coppa has added a feast and they are doing prixe fixe or a la carte.

    Make Up Your Own

    You might decide to have your own taylor made seafood feast during the holidays. You can buy and cook your favorite fish or dine out choosing the menu items that appeal to you. Another option is meeting up with friends at a great seafood restaurant like Island Creek Oyster Bar and sharing a bunch of items that appeal to the group. That could help nudge you out of your seafood comfort zone.

    The nice thing about menus for this holiday is that they are less prescribed, letting you start your own traditions. Let us know what you decide to create for your own Chistmas eve menu.

  • Pecorino di Moliterno- Cheese from Sardinia

    We always like to let you know when a great wheel of cheese, like this Pecorino di Moliterno, is being cut at one of the area's great cheese shops. We bought this one at Salumeria Italiana in the North End.

    Pecorino means it's made with sheep's milk but, in this case, it may have a bit of goat's milk added. Some Moliternos do. Salumeria also had a second version of this cheese with truffles added.

    As you can see, we paired this with Bosc pears. It was a great combination! Some vendors selling this cheese suggest following the Sardinian tradition of serving it with a smidge of hot pepper jelly. 

    Sheep's milk has a higher fat content than cow or goat milk. Therefore, the experts suggest you remove from refrigeration and bring to room temperature only what you want to eat immediately. As the cheese warms, some of the fat will come to the surface. That will never be reabsorbed if you have to put it back in the cooler.
