  • Want to Start Cooking? Make Soup!

    Last winter, one of the staff people in our building said to me, “I would give anything for one more bowl of my Mother’s chicken soup.” Homemade soup is a food we associate with family, tradition, and perhaps good memories. Every so often, I make a batch of the clam chowder that was served at Rhode Island shore dinner halls in years past. It reminds me of fun times with my extended family.

    Soup Is Forgiving

    For those new to cooking at home, soup is a great place to start. In his book Ruhlman's Twenty, Michael Ruhlman quotes food writer Ruth Reichl who said, "If you've got chicken stock, you’ve got a meal.” (Among the recipes included in his twenty techniques are a few for soups.)

    What's more, it doesn’t have to be chicken stock. You can make soup with water or make your own stock from what you have on hand. Some cooks even freeze their peelings and vegetable scraps until they have enough to make a vegan soup stock.

    (Ed wrote about this cabbage and kielbasa soup here. It's one of our favorites. It's my quick way to enjoy the flavors of stuffed cabbage and kielbasa with a lot less work.)

    Unlike fussy preparations, soup is very forgiving. If you don’t have one ingredient, you can usually substitute another. Soup cooks over low heat so it’s not likely to burn or scorch. And, it’s a great way to learn how to adjust the flavor of a dish.

    If you think your cabbage soup is flat tasting, ladle some into a small bowl and add a dash of vinegar to see if it helps. If you like the result, you can add some vinegar to the whole pot. The same can be done with herbs, spices, salt, and pepper.

    If you need a formula as a starting place for soup, I recommend Pam Anderson’s book, How to Cook Without A Book. She leads her chapter on soup with this rhyme, “Sauté an onion, then add vegetables, starch, and meat. Cook it in a quart of broth for a meal that can't be beat.” Then, she goes on to teach the reader to improvise around that theme.

    And, even the meat is optional. Anderson starts with a recipe for pureed vegetable soup and tells readers how to prepare variations with broccoli, cauliflower, potatoes, and squash.

    Most of the cookbooks on your shelf will have a few recipes for soup. I Googled "soup recipes" as I wrote this and the result was, "About 18,400,000 results (0.30 seconds)."

    However, recipes for soup can be used as simple inspiration or as a jumping off point. Take a look around your kitchen and see what you have on hand. Make a soup that is your own or, as in the case of the cabbage and kielbasa soup, make a soup version of a favorite dish for the flavor with a lot less work.

  • Happy Times Digging Clams

    Author Tamar Adler in “An Everlasting Meal: Cooking with Economy and Grace” praised bivalves writing, “Clams and mussels, with their hard little shells and tiny bodies, are among the most naturally giving of sea creatures. They carry tiny wells of seawater with them wherever they go.”

    I agree and love the fact that when you cook with them, they add the bounty of that fresh seawater flavor to the dish.

    These great fresh clams were at New Deal Fish Market on Cambridge Street in Cambridge.

    Clams are something I associate with happy memories. They make me think of days on the beach digging softshell clams. I remember, as a kid, opening small clams on our boat with my clam knife and passing them to my father to enjoy while he and my uncles dug bushels of the larger quahogs that would become part of our frozen winter seafood supply.

    Aside from shucking, my job was to sort and test the clams with a ring to be sure they were all of legal size. Clams are one of the easier foods to forage, but you do need a license from the local city or town where you will be digging and to know the size and daily catch limits. You should also check with the local shellfish authorities daily to be certain shellfish from that area are safe to eat.

    New England Clams

    Our local names for clams can be confusing to visitors. We call the soft shell clams with the long, protruding siphon a steamer, and the middle size hard shell clam a littleneck. Wikipedia explains the grades, “The smallest legally harvestable clams are called countnecks, next size up are littlenecks, then topnecks. Above that are the cherrystones, and the largest are called quahogs or chowder clams.”

    Razor clams or as they are officially know Atlantic Jackknife Clams have been gaining popularity, but I find they need a really skillful hand to prepare. It’s not something I would tackle at home. 

    The very large surf clam that was used to make Howard Johnson’s famous clam strips is found today in some chowders and sushi.

    Summer Food

    Some favorite foods of summer are based on this category of shellfish. Chowders, fried clams, stuffed clams, clambakes, steamers, clam fritters (called clam cakes in Rhode Island) all give us reasons to visit summer destinations along the shore.

    Hot weather brings out cravings for some of my favorite clam dishes. One dish that I often find myself wanting is Clams Al Forno – a wonderful dish of littlenecks roasted in their shells and topped with a mixture of chopped tomatoes, sliced onion, chopped garlic, jalapeño, red pepper flakes, white wine, and butter. When all the clams are open, they are sprinkled with julienned scallions and served with lemon wedges and plenty of crusty bread to soak up the sauce.

  • Have You Tried a New Food Truck? We Visited the Cod Squad Truck

    We're already out taste testing the new additions to the Boston Food Truck scene. Last Thursday, we tried the Cod Squad Truck from Captain Marden's Seafood. Their haddock sandwich was a hit! We'll do a full report once we've tasted a few more items.

    Keep an eye on the Cod Squad Truck specials board. We had a fun Twitter conversation with the truck crew this week. If you see "Penny's Special," it will be their version of Rhode Island style clam chowder and clam cakes.

    It might be the clear chowder we have told you about in the past or the red chowder that was served at all the shore dinner halls and amusement parks. That is sometimes called Rocky Point Clam Chowder. The clam cakes are fritters containing pieces of clams that you can dip in the chowder. 

    Either Rhode Island Chowder should qualify for the trucks healthy option. The clam cakes will have to count as your weekly cheat if you're watching what you eat.

    Once the season gets rolling, this spot on Belvidere Street (map) near the Christian Science fountain should be a destination with up to 4 trucks at a time, convenient seating, and the entertainment of watching people play with the fountain. (More fountain fun at Water Attracts)

    Update 04.09.13: Correction! There will be 3 trucks at Belvidere Street. It is site #4 not 4 trucks. Thanks to Steven from Hub Food Trucks for explaining that #4 on the city's schedule to me!
