  • Rhubarb, Ginger Crostata Recipe from Leite’s Culinaria

    Okay, when you click on this link to Leite’s Culinaria to get the recipe, it will just say Rhubarb Crostata, but the ginger sets this simple tart on a rung high above similar recipes.

    I'm sure a few long-time readers are surprised to see a recipe for baked goods here because I'm not a baker, I'm a cook. But this dessert is so simple and quick that it should be part of every cook's repertoire.

    I had posted the recipe on social media when it popped up on my daily reading list. (As you know from this previous Friday Link post, Leite’s Culinaria is one of my favorite sites.)

    A friend saw it and delivered a big bag of her own freshly cut rhubarb with a note saying, "I was totally inspired by your rhubarb post this week …"

    Just imagine walking into a summer potluck with a tray of these beauties made with whatever fruit is in season.

    My Version with a Major Shortcut

    I used Trader Joe's frozen pie crust instead of making my own. Thanks to this excellent, flaky crust and the ease of making crostata, I do make these pastries from time to time.

    I've been using it since back in 2010 when Erin Zimmer, one of my editors at Serious Eats, tested it. She was right, it is crumbly. But this is an informal dessert and a few crumbles are fine. 

    My work to make this dessert consisted of cleaning and cutting the rhubarb, grating the ginger, and tossing those with the other ingredients.

    I also used less sugar as suggested by one of the recipe testers. And, because I thought it would add depth and round out the sharp notes of the rhubarb and ginger, I used half light brown sugar and half raw sugar.

    A Few Tips:

    • The frozen dough takes time to thaw. I moved it from the freezer to the refrigerator overnight and it still had to sit on the counter for an hour before it was ready to use without cracking and breaking.
    • I used local, organic ginger from Old Friends Farm. I keep a supply of this zesty alternative in my freezer and just grate it in its frozen state.
    • Once thawed, I left the pie crust between its layers of plastic and used my hands to reseal a few cracks. That meant no rolling pin or floury counter to clean.
    • You can use the bottom piece of the plastic to help flip the pastry onto your prepared baking sheet. Pile on the filling then flip up the sides in your most casual manner.

  • At the Market: July 4th Food Shopping

    Shopping for fresh, local food for your holiday picnic, party, or a quiet dinner at home for July 4th can start at your local farmers' market. By now, most summer markets in the area are open or about to open. Here is our list of opening dates and schedules for the major markets around the center of Boston.

    Beyond Burgers

    We've been reporting on seafood options at the markets this season. You'll find stands from Red's Best, C & C Lobsters, Global Seafood, and Cape Cod Fish Share at markets around the area.

    And, if you make it ahead, you might include a bit of the South in your Boston celebration with some pulled pork or chili with full-flavored pork from Stillman's. Or, if you're making burgers, grill some great lamb burgers with their ground lamb as a flavor option.

    The Word from the Farms and Markets

    Lily Carone from Atlas Farm says, "The strawberry picking will be done after the weekend – possibly not making another appearance at Copley on Tuesday. But blueberries from River Valley Farm are very close behind! (Maybe in time for the 4th!)" and "Tender, sweet broccoli is on the stand now – along with the different varieties of beets & carrots! It's been a long wait, and the carrots are sweeter than I remembered!"

    Ben Sommer, Copley Square Farmers' Market Manager said, " This past week at the market I spied the first glimpse of summer squash, hiding out amongst the luscious greens, adding a splash of yellow to the farmer's display. That burst of yellow is a sign of summer and a hopeful symbol for the sun, which has been sorely missed these past few weeks."

    Ben added, "Another sign of summer is over at Hamilton's Orchard's tent, where you can grab an ice cool lemonade and lay on the grass with other sunbathers in the heart of the city. The farmers have a practice of adding some fresh strawberries to these lemonades and shaking them up to get that added sweetness and flavor."

    Eggs, meat, and fish are always in-season and available at more markets.

    We also saw: tatsoi, cut herbs (cilantro, parsley, basil, and dill), hakurei turnips, fennel, broccoli, mushrooms, garlic scrapes, salad mix, lettuce, arugula, radishes, beets, scallions, kolrabi, bok choi, chard, small onions with green tops, snap peas, sweet peas, herbs, hot house tomatoes, and honey.

    Get Some Before It's Gone!

    Marshall's farm tweeted, "The last of our own Asparagus so make sure you get your fill."

    Strawberries! Enjoy them now this could be the final week for some farms. 

    And, the rhubarb to match with the strawberries will soon disappear.

    Blueberries and early raspberries – Peter Ward, Market Manager at Central Square, Cambridge said, he expected to see some raspberries (variety Prelude) this week.

    And, as we reported last week, Barbara Hamilton from Hamilton Orchards hoped to have ripe berries around the Fourth of July.

  • Romancing the Rhubarb

    It was a rhubarb spring for me. Looking at the photos I took during an early season trip to Provincetown, a big smile crossed my face as I recalled taking these pictures early one morning in our Chandler House kitchen, before enjoying a perfect breakfast.

    That little, lovely jar, shining in the morning sun, was full of rhubarb preserves from PB Boulangerie in Wellfleet.

    We always stop there on our way into P-Town to supply ourself with their crusty baguettes, buttery croissants, and bike trail cookies. 

    These oh-so-satisfying, sweet/tart preserves (made by the owner's mother when she visits from France) inspired me to seek out rhubarb in other forms all spring.

    I bought fresh rhubarb at the Copley Square Farmers' Market and, following my Grandpa's lessons, turned it into a rhubarb compote. He didn't actually use recipes. He just cut the rhubarb in his back yard, removed the leaves, washed it, chopped it, and then cooked it down with a bit of cinnamon, nutmeg, and a touch of water. 

    Here is a basic recipe. But, read the comments. There are great ideas there that I'm going to try.

    I've spotted strawberry rhubarb pies at the markets. Barbara Hamiltion of Hamilton Orchards said she's planning to make some rhubarb preserves and may even make some with low sugar or honey for those who like a touch of sour.

    On my tasting list are Fee Brothers Rhubarb Cocktail Bitters, Rhubarb soda, and– when she makes them– Vianne Chocolat's Raspberry Rhubarb Truffles!
