  • We’ll Toast February with a Gift of Gosset “Grande Réserve” Brut Champagne

    We did not puzzle over which sparkling wine to choose for our February toast. It had to be the bottle of Gosset "Grande Réserve" Brut Champagne our friend Bob dropped off for us last month. Since our theme for 2021 is "Wines we love and honoring friendships," it was a perfect choice.

    Penny didn't have to think twice about a background for a photo of this month's wine since she had just finished a jigsaw puzzle of a lovely scene that might be somewhere in France. It even had one piece not quite pressed in place that looked like a little guy running towards the bottle. From our research, we think we may be running to get more of what sounds like a very special wine. Also, she has been sharing her jigsaw puzzles with friends. Another friendship link!

    Here's what we learned:

    Regular readers know we love learning the history of vineyards. Gosset has a very long history. On the Gosset site, they write:

    "The story of the Gosset family begins over four centuries ago with the first official ancestor of the family line, Jean Gosset (1484–1556), “Seigneur of Aÿ and Mareuil”. Following in his footsteps, sixteen generations, all born in Aÿ in Champagne, would go on to win fame not only as deputy mayors, mayors, prosecutors, but also in growing and trading the wines of Champagne"

    Their details about the Gosset "Grande Réserve" Brut Champagne:

    Varietal Composition: 45% Chardonnay, 45% Pinot Noir, 10% Pinot Meunier
    Vintage Composition: 80-90% 2015, 10-20% 2013 & 2014 vintages
    Alcohol: 12%

    Suggested Serving Temperatures: Between 8 C and 10 C (46 F and 50 F)

    Tasting Notes: The color is bright and golden, the nose open and expressive, and the palate is dominated by a refreshing mineral tension.

    Jean-Pierre Mareigner, Cellarmaster says: “This is the true signature of the House. An expression of the Gosset style, which I have been maintaining for 30 years.”

    Trying wines from different places, made with different grapes, and produced by different methods adds spice to our monthly ritual. Since 2007 we have raised a glass of sparkling wine to greet each new month!

    This bottle was a gift, but with the photo of this back label, your favorite wine merchant should be able to find it for you.

  • Philipponnat Royale Réserve Brut Champagne with Great Stories for Toasting March 2019

    Happy New Month! This time we are raising a glass of Philipponnat Royale Réserve Brut Champagne to salute the month of March.

    Today we will also toast two wonderful gentlemen, Tom Fielding and Scott O’Connor, who provided us with fabulous wine selections at Perry's in Provincetown for years.

    Here's to the two of you! We hope you'll have many happy years in your new home in San Miguel de Allende. This is the last bottle we have that was one of their selections. And what a selection it is! We can't wait to taste it.

    Philipponnat has its own story!

    In case you didn't notice the 1522 in the top photo, we took a close up of it on the neck of the bottle. The Philipponnat family have been on this land for nearly 500 years. They provided wine to French King Louis 14th, other royals, magistrates and mayors, even to those in the Champagne region.

    We have read that the current family member managing the vineyard is Charles Philipponnat who's responsible for bringing it back to greatness by paying close attention to details from vine to bottle.

    No flutes for this wine. We'll be enjoying it in large wine glasses to capture every nuance of the blend.

    The winemakers say:

    "The Blend: 65% Pinot Noir, 30% Chardonnay, 5% Pinot Meunier. First press juice of mainly Grand and Premier Crus grapes from the heart of the Champagne wine-growing area. 20 to 30% of reserve wines are aged in wooden barrels using the solera system to incorporate older wines without losing freshness."

    "TASTING

    To the eye: Deep gold in colour with amber glints. Delicate froth, lively and lingering.

    With the nose: The first nose reveals vine blossom, linden and fresh, lightly toasted bread. After breathing, aromas of summer berries, citrus fruit and honey develop.

    With the mouth: Fine vinous attack on the palate, fruity (red currant, raspberry, ripe grape) and full- bodied, generous and long. Light notes of biscuit and freshly baked bread on the finish."

    Tip: When you want to find a wine, take a photo of the back label. This gives you the information your wine shop will need to order it for you.

    (03.01.19) 4p – Update: Be sure to drink this wine through the temperatures because it is spectacular at 55º in a large glass!

  • Breadcrumbs Are Golden

    Serving a dipping dish of buttery breadcrumbs gives these quickly steamed artichoke halves the taste and crunch of our "much-more-work" favorite recipe of stuffed and baked artichokes. A quick dip in olive oil or melted butter and then the crumbs makes for a delicious leaf.

    You may see “pasta aglio e olio” popping up on menus. That seductive sounding Italian phrase translates to pasta with garlic and oil. The surprise when you first meet this dish may be beautifully toasted breadcrumbs sprinkled on top where you would have expected cheese.

    We recently enjoyed this dish of pasta with mushrooms and peas topped with breadcrumbs at Eastern Standard.

    Evan Kleiman, chef, food writer, and host of the radio show and podcast “Good Food,” wrote an article on the topic for the L.A. Times. In praise of breadcrumbs she wrote, “Toasted with garlic and olive oil, they can lend a textural and flavorful crunch to a variety of foods. You'd never know that something as simple and ubiquitous as a handful of crumbs could be what you're looking for to amp your everyday recipes.” She calls, “… spaghetti aglio e olio (their highest use, in my opinion).”

    A sprinkle of cheesy breadcrumbs are the perfect finishing touch to this bowl of pea soup.

    Filling in For…

    In lean times, breadcrumbs have been used to expand food. They are mixed into chopped protein sources to make everything from meatballs to crab cakes. They add body and protect foods when they are used as a batter coating. The meat in popular dishes like chicken or veal Parmesan is first pounded thin and then bulked up with a tummy-filling coating of breadcrumbs. 

    In times of food rationing, people were urged to save breadcrumbs and turn them into main courses. Mixed with liquids they became breakfast cereals and desserts. Recipes were created to make meatless loaves and cakes using fine crumbs in place of proteins and flour.

    In the book, "Nonna's House: Cooking and Reminiscing with the Italian Grandmothers of Enoteca Maria," we learned another use. "The Nonnas come from different generations and different places, so they have many useful tricks. Simple ones, like a Sicilian Nonna throwing a handful of breadcrumbs into a pan of spaghetti with marinara. ‘What are you doing?’ I asked, as she mixed it in. ‘It thickens the sauce. This is our way,’ she said."

    Butter-toasted panko breadcrumbs with a dash of Parmigiano Reggiano and Aleppo pepper add an attractive and delicious finishing touch to simple, steamed cauliflower.

    With a bit of imagination, the lowly breadcrumb was turned into something elegant and delicious. England’s famous Queen of Puddings is simply a custard mixed with breadcrumbs and topped with jam and meringue. One hot menu craze these days is roasted cauliflower steaks many of which are topped with garlicky breadcrumbs.

  • Who Are the Men Depicted in These Profiles on Boston’s Statue of Alexander Hamilton?

    You may have walked by the statue of Alexander Hamilton on the Commonwealth Avenue Mall dozens of times. Did you ever wonder who the three men are in the bas-relief profile on the base? 

    According to the Smithsonian Museum's database of outdoor sculpture, they are (from right to left) George Washington, Alexander Hamilton, and John Jay.

    Here are a few tidbits you may not know about this statue of Alexander Hamilton.

    • This sculpture has been located between Arlington and Berkeley Streets on the Commonwealth Avenue Mall since 1865. 
    • It's one of the few surviving works by Dr. William Rimmer, whose father claimed to be Louis XVII, heir to the French throne. 
    • In the book, A Guide to Public Art in Greater Boston, Marty Carlock says Rimmer's interest in anatomy led him to a career in medicine which he practiced for a few years. Rimmer became a full-time sculptor at age forty-five.

    • This is the only sculpture carved from stone on the Mall. Since Rimmer was self-taught, he used his own technique to create it. According to Public Art Boston, this technique makes the sculpture "particularly fragile and difficult to maintain."
    • The Friends of the Public Garden have taken on the responsibility for restoring and then providing annual maintenance of the artwork in The Boston Common, Boston Public Garden, and Commonwealth Avenue Mall.
    • To help The Friends pay for this work, you can contribute to the Henry Lee Conservation Fund.
