  • Entertaining? Wrap It Up!

    From the most casual burrito to Julia Child’s elegant “Salmon en Papillote,” food in wraps, of one kind or another, can be a great solution for entertaining.

    Here's one of our favorite wrap-ups – a Vietnamese crêpe using lettuce to create the perfect bite!

    On the casual side of the world of wraps, many food cultures have their own version. Think of the Italian piadina, Greek gyros, Vietnamese lettuce wraps, Mexican tacos, Indian roti, Japanese sushi, Chinese moo shi, dumplings and the list goes on and on. Many of these began as street food and the wrapper made it easy for someone to eat as they stood or walked along.

    On the elegant side, we have a world of food wrapped in paper (in the case of Julia’s “en Papillote”) or in pastry as in Beef Wellington, Camembert wrapped in pastry, savory strudels, and pies enclosed in hot water crust, pizza dough, puff pastry, phyllo, or dozens of other coatings.

    Quesadillas are another wrapped food.

    Create a Wrap Bar

    For easy entertaining you can create a wrap bar which is nothing more than a table filled with an assortment of good things to tuck inside another good thing. You can have a theme using any of the cultures mentioned above.

    For example: a taco table could have tortillas, salsas, avocados, pickled onions and cabbage, meats, chopped lettuce, crema, and lime. You can offer non-meat options like sautéd zucchini, scrambled eggs, seasoned potatoes, or for a very authentic taste nopales – otherwise known as cactus paddles.

    By letting everyone select and prepare their own meal, you can accommodate friends and family with many food preferences.

    Here is another favorite of ours, Salmon en papillote with carrots, ginger, chives, and lemon zest peeking out of its parchment paper wrapper.

    En Papillote

    In Jacques Pépin’s “New Complete Techniques,” this master of cooking skills writes, “When you see ‘papillote’ on a menu in a French restaurant, you can safely assume that it describes a dish served in an envelope of parchment paper …” He goes on to explain, “When the papillote is folded correctly (it is sealed so that none of the aroma and steam can escape) it browns nicely, inflates, and the dish inside bakes in its own juices. The papillote is served directly on the serving plate and the guest opens it himself.”

    If this is the only dish you learn to cook for company, you will be a relaxed chef with happy guests. You can prepare the packages hours in advance and tuck them into the refrigerator to wait for their trip to the oven.

    Change-ups for different guests are easy. If salmon is on the menu, just substitute a piece of chicken for the person who doesn’t like fish. You can make a vegetarian option or one without a specific ingredient.

    Your main item in the parchment paper package is topped with a selection of vegetables, herbs, and seasoning that enhance the flavor and complete the meal. With today’s prepared vegetable options in the marketplace, you don’t even have to do all the chopping and prep work. Just select your main ingredient and shop for some spiralized vegetables to add to the meal. 

    If folding the packages is more than you care to do, there are even parchment paper bags to make that part easier.

    Most versions take less than half an hour in a hot oven and are ready to slide onto a dinner plate and present at the table.

    Crêpes are another lovely wrapped meal.

    Some dinner party entrées, such as Beef Wellington, take a bit of skill and cheffy work to succeed. If you have the time and the skills, this dish can be fun to make and very impressive to serve. However, there are other options that can begin with a package of pizza dough or frozen puff pastry and your imagination. So the next time it’s your turn to entertain, think about how you will wrap it up!

    Always adding a new twist to our lunchtime pleasure, the team from Mei Mei Street Kitchen provided us with one of the best lunches of the week, last week.

    Fritters made with local corn, local habaneros, and fried just right. They were light and crisp outside and filled with corn goodness inside. Mei Mei was serving them with Aioli, but they suggested spicy ketchup when we asked to have them without the mayo.

    We love Mei Mei dumplings. These were deep-fried, stuffed full of meltingly tender, braised beef and set off by a serving of rice, pickled zucchini, and tangy dipping sauce. This is a filling meal.

    Who's here: The schedule calls for Mei Mei Street Kitchen, Roxy's Grilled Cheese, Frozen Hoagies and Boston Speed Dog. (Update: May 3, 2012: Check the latest feeds from these trucks. Steve at Hub Food trucks tells us there have been some changes to the schedule.)

    What we had: The opening day of Mei Mei drew us out to this spot. Our lunch was "Beef & Cheese Dumplings," "Porky Mac & Cheese," "Supah Spicy Magic Brownies," and "Crimson Berry Iced Tea." 

    Hours and dates: So far, some Tuesday through Friday lunch and dinner slots are filled here. 

    Tips: If you crave shade on a summer afternoon, the open space east of the building where the truck parks is a nice strip of shady grass that everyone seems to use for sitting and walking between streets.

    And, if you are visiting the Museum of Fine Arts, a visit to a food truck might be just the break you need in a long day of viewing treasures.

    Where to Eat: There are benches up towards the museum, grassy lawns for picnic style dining, stone seating on Forsyth Street and a few tables in front of a Northeastern building on the corner. 

    Where to eat inside: We'll leave this one to you. Let us know if you have a good idea for a place to dine inside in the winter. 

    Restrooms: You could check in the Northeastern campus buildings where the public is allowed. If you're a member of the Museum of Fine Arts, you can use your free admission to access their facilities. If you know of a spot or two, add them to the Universal Hub Wicked Good Guide to Boston Restrooms so the rest of us can find them.

    Known for/must try/signature dish: It's early days, but we're betting they will have a problem taking the Beef and Cheese Dumplings w/soy-vinegar sauce off the menu. We returned for seconds.

    They say: "We pride ourselves on serving humanely raised meat and some of the most creatively delicious street food out there. Handmade braised beef dumplings with red wine and cheese, yes please! Mac & cheese with Chinese spiced pork, enough said. Steamed pork belly bun with crispy crackling, seasonal pickles, sesame chili aioli and local apple hoisin sauce? Yup, we’ll treat you right. "

    Nice Touch: They'll try to have something vegetarian on the menu every day. We noticed their careful attention to the needs of those with restricted diets. The counter has liquid sweetener to mix into your iced tea. And, there's a big bottle of Sriracha for those who want a bit more heat.

    Philosophy/Mission: "Grow well, eat well, be well: It’s what we want for ourselves, our family, our business, and our guests." Here's what they are doing to back up these words.

    History: They tell us, "We’ve taken food we have eaten and loved as children in the past, added modern elements and experiences of the present, and also incorporated practices that fit with our vision of how to do business for a sustainable future.  With Andy’s many years in fine dining management, Mei’s experience as a successful entrepreneur and MBA, Irene’s time living on a farm and working as a line chef and our combined love of good times and great eats, we have crafted a deeply personal venture that we hope you’ll enjoy as much as we do."

    Here's Steve Leibowitz ready to order another round. 

    Regulars say: We ran into Steve Leibowitz from www.hubfoodtrucks.com who works at Northeastern and was all smiles after his first Mei Mei meal. "I think it's fantastic!" he said. "I had the Beef & Cheese Dumplings and they were great." A friend of his, who had the same thing, offered the perfect description, "It’s like prime rib in a dumpling!”

    And, a customer named Lisa went up to the truck and ordered, "One of Everything!"

    Did you know? "Mei Mei" is Chinese for "little sister" and the founders are Andy and his Mei Meis.

    They were treating customers to some wonderful French green tea macarons.

    Order and Pick up routine: Step up near the back of the truck, next to the menu board, to order and pay. Pick up is on the other side of the window near the front door. They'll call your name when your food is ready.
