Coming Home with Full Bags from the Copley Farmers Market

Happily our shopping bags were heavy on the way home from the Copley Farmers Market on Friday. We did miss out on our favorite strawberries so we plan on being on hand at the opening bell today.

The Atlas Farm stand had a nice selection of greens, vegetables, and even some heirloom tomatoes. And, of course, this market has a great fish vendor, bakeries, meat, and prepared foods.

A Bee Is Never As Busy… Shoot the Quote

Does this bee from the Copley Square Farmers' Market bring a dose of sunshine to a winter week? It is here to tell you about a new BostonZest feature, "Shoot the Quote."

One of our regular assignments is to provide a front page photo for the Back Bay Sun. While these are often related to an event or have a caption that describes the people in the photo, sometimes they are simply a picture we love with a quotation. Here's an example.

“Sailing a boat calls for quick action, a blending of feeling with the wind and water as well as with the very heart and soul of the boat itself. Sailing teaches alertness and courage, and gives in return a joyousness and peace that but few sports afford.” George Matthew Adams (American newspaper columnist, 1878 – 1962)

Some week's, like in the case of the sailing photo above, we take a photo and then find a quote that fits it. Other times we have a quotation we love and we go out and, "shoot the quote." That is, we try to take a photograph that fits that quotation.

Here's an example of a quotation that we had and took a photo to express it.

“How softly summer shuts, without the creaking of a door.” Emily Dickinson (American poet 1830-1886)

Now we're going to play shoot the quote with any of our readers who would like to join in. You can make this a private challenge that will have you looking at the world around you through a different lens.

Focaccia Croutons Are Tops

While I don’t enjoy TV cooking contests, I do love to set myself a challenge now and then. A favorite one is using up what is left on hand as we get ready to leave a rental house.

We had purchased a loaf of focaccia the day before and had what we needed to make a big salad, so the focaccia became croutons. I cut the bread into cubes and sautéed those in a bit of butter and olive oil. Before they left the skillet, I tossed them with salt, black pepper, aleppo pepper, and fine french herbs. This made some of the best croutons I’ve ever had.

This was Deep Dish Rosemany Focaccia from Iggy’s Bread of the World. Fortunately, it’s sold at Angell Foods in the East End of Provincetown as well as around the Greater Boston area. We’ve bought it at the Copley farmers’ market.

The salad the croutons topped was a vision in green with romaine lettuce, cucumber, and avacado. It made a great combination and cleaned out the vegetable bin.

Focaccia Croutons Are Tops

Corn Micro Greens from Silverbrook Farm
If you love the flavor of sweet corn, you'll find dozens of ways to tuck these spunky, corn micro greens into your summer dishes.

When one of our trusted farmers says, "Try this," with a big smile on his face, we often discover a new something spectacular. Scott Hurwitz from Silverbrook Farm convinced us to try what he was calling "micro popcorn" last week. They are actually young corn shoots. And as you nibble your way from the tip of the leaf to the stem, the pure corn flavor intensifies.

These tiny corn plants were tucked among the more traditional micro greens that many farms are producing now for area chefs. In fact, if these are still around next week, we may buy them as thank you gifts for some of our favorite chefs. There's nothing like a new ingredient to make a chef smile.

Here are a couple of descriptions from other people who have tasted these little flavor bombs.
- "…sweet corn shoots, those are my favorite. They have a really sweet flavor that almost masks the corn flavor. It kind of explodes on your palate," says Eric Longhmi, a chef at the Boulder Country Club." f rom here.
- Scott described them as tasting like kettle corn.
How would you use a micro green that tastes like corn intensified and has a flavor that lingers?

We see it sprinkled on a taco to reinforce the corn flavor. Or, adding a second hit of corn to our summer corn and potato salad.
