  • Some Ways to Use Caponata

If after our post 'Tis The Season to Make Caponata you made a batch, here are some ideas on how you can turn this pantry item into a meal, a course in a menu, or a snack.

    IMG_2879

Caponata makes a wonderful opening bite served on bruschetta. Pack it in a mason jar alongside a package of toast and it’s a perfect addition to a picnic or potluck. Guests can spoon out as much or as little as they like. It is a perfect addition to an antipasto tray.

    IMG_2892

One more choice you have when making this dish is how fine or coarse you chop the ingredients and how long you cook them. Finely cut it can be added to a sandwich as a relish. A chunkier version makes a great side dish. You can also chop the finished product for a specific dish if you want smaller bits.

You can turn caponata into a meal by topping a serving with eggs. You can stuff an omelet, place a poached egg on a bed of caponata, or serve it on toast with hard boiled egg slices.

    IMG_0544

In the photo above, I cooked up rice and ground turkey then mixed in a good helping of finely chopped caponata as the seasoning for a mixture. I stuffed this into small yummy peppers and baked. They were little bites that we enjoyed for dinner, but they would also be great appetizers.

    IMG_0466

It can turn a starch base like pasta, rice, or a potato into a meal by mixing it in or topping it with the relish. Top with parmesan or romano cheese, shaved with your trusty vegetable peeler, and you have a luscious plate.

More Riffs on the Caponata Theme

For a great entrée, try mixing it with a good canned tuna in olive oil, or serving on top of a piece of grilled meat or fish.

Caponata gets along well with cheese, so consider a grilled cheese sandwich with the caponata in the sandwich or beside it. You can also add it to a cheese plate.

  • Mench, Eetch, Tomato Tabouli? Call It What You Will, It’s Delicious and Easy

Browsing the refrigerated cases at Russo's, I came across containers of baba ghanoush and metch. These made me long for May to arrive when I would pick up this combo from Seta's Mediterranean Foods at the Copley Farmers Market.

      IMG_9445 - Version 22016-03-17eetch-metch-tomato-tabouli-rolluo-cuucmber-tomatoe-lettuce© 2014 Penny Cherubino

I decided to gather some supplies to make a lunch of baba ghanoush and metch the way Chef Seta Dakessian suggested it be served the first time I purchased it from her – wrapped in crisp lettuce leaves!

I found a more detailed lunch idea in an interview the chef gave to the Armenian Mirror Spectator. She said, “Metch is traditionally eaten in lettuce leaves. Eetch is a Turkish word and metch is the Armenian word,” shared Dakessian, and continued, “I personally make it a meal by adding a dollop of hummus or babganoush to the metch in lettuce leaves and then adding fresh tomatoes and lemon cucumbers.”

      IMG_9450 - Version 22016-03-17eetch-metch-tomato-tabouli-rolluo-cuucmber-tomatoe-lettuce© 2014 Penny Cherubino

I must have remembered the tomatoes and cucumber but my choice was small Persian cukes. I had quite a bit of Romaine lettuce at home, so I used that, but I love this wrapped in Boston lettuce cups.

For this batch, I sliced slim Persian cucumbers and some small Tasty Tom tomatoes that actually smelled and tasted like tomatoes despite the season. You can also chop these and sprinkle them over each wrap. Ed thinks they're easier to eat that way.

For the plate above, I also created three different serving sizes using lettuce leaves from the interior and exterior of the head. You can make these for appetizers, a side dish, or an entrée. If I were making a tray of them for company, I might vary the sizes to let everyone decide what size serving they would like.

    IMG_9447 - Version 22016-03-17eetch-metch-tomato-tabouli-rolluo-cuucmber-tomatoe-lettuce© 2014 Penny Cherubino

You could also arrange the ingredients on a tray and let guests make their own with more toppings available. Think feta cheese, red onion, chopped peppers, and some Aleppo pepper to sprinkle on top for those who would like a bit more heat.

    IMG_9460 - Version 22016-03-18eetch-metch-tomato-tabouli-avocado-toast-cuucmber-tomatoe-lettuce© 2014 Penny Cherubino (1)

Here metch, baba ghanoush, tomatoes, and cucumbers fill out a meal of avocado toast.

Tasting the difference between Seta's metch and Russo's metch I went off exploring recipes. There are many with subtle variations. And it looks like this is something many of us should add to our repertoire.

A few authors called it tomato tabouli which gives you a pretty good idea of how it's made. The big difference is that in most recipes the bulgar (always fine grained) is expanded or "cooked" in a warm tomato sauce.

    Recipes:

Armenian “Eetch” (Bulgur Tomato Salad) adds Aleppo, one of my favorite peppers!

Recipe for tomato tabbouli from the Boston Globe food team.

Tabbouleh vs. Eech: Is There a Difference? – here the Eetch is formed into balls

Eetch (Red Tabouli / Mock Kheyma) – interesting theory that this is a replacement for raw meat.

Do you have a favorite recipe for Metch?

  • Where to Pick Up Great Food for Boston Summer 2014 Events

This is going to be a big week for events around Boston with both the July 4th Celebration on the Esplanade and Boston Harborfest. If you want to pick up a picnic to enjoy at a summer event, we have some great links. (A tip to our often confused visitors to Boston on July 4th – the Boston Pops concert and fireworks are on the Charles River NOT on the harbor!)

Along the Charles on July 4th, both sides of the river will be filled with fireworks fans. Here are some of the places where you can pick up a meal near an entrance to the Esplanade or close to Memorial Drive on the Cambridge side. You do need food while you stake out your spot for the big show.

Be sure to check the July 4th official site for the latest security restrictions for the Hatch Shell Oval and island areas before you plan your picnic and figure out how to carry it to the concert and fireworks.

  • Woody’s Grill & Tap Rediscovered Thanks to Friends

Woody's Grill & Tap has made it back into our regular rotation after our friends Liz & Mick suggested it a few weeks ago. The four of us had a great meal!

We have always enjoyed the wood oven pizzas from this kitchen.

This BBQ Chicken pizza was what we were in the mood for on a recent visit. It's one of their regular selections, but do check the blackboard specials. We had a great fig pizza with gorgonzola for dessert on one visit.

Ed went for a Guinness with the BBQ pizza. Penny had a crisp Pinot Grigio.

It can be easy to take a great neighborhood spot for granted after more than 15 years in business. We're glad we rediscovered Woody's and are going to enjoy some meals there this summer while the students are out of town and nearby restaurants can use a bit of local support!

We recently added them to our list of place to eat near Symphony Hall.

Appetizers, like this grilled asparagus with polenta and a terrific greek salad, have drawn us back for quick meals at the bar.
