  • Our July Sparkler Is Bursting with Bubbles! Jean-François Mérieau Bulles (2009)

    To me July has always been the month that means summer has really arrived with no shortage of reasons to celebrate – July 4th, vacations, warm weather, lots of daylight! And, because of its outstanding potential, we’re toasting month #7 with an equally impressive bottle of Jean-François Mérieau “Bulles” (2009).    

     

    Made in the traditional champagne method, this sparkler (90% Chenin Blanc, 10% Chardonnay) is described as “vibrant and crisp,” having “a pleasant nose, with some white fruits and vine peaches aromas … Very much a celebration pre-dinner wine.”

    Winemaker Jean-François Mérieau has been praised as ambitious and creative – one of the new stars of the Loire region, no argument here.

     

    According to K&L Wines, Jean-François Mérieau “Bulles” Touraine Sparkling is “a refreshing, crisp wine … has a bright nose of apple and pears with hints of citrus … palate is creamy and rich … finish is juicy and long.”

     

    (Wine Spectator) – “This sparkler is forward, with a prominent spicy ginger note lading [sic] the way for pear, melon and brioche flavors. Stays racy on the finish, with the ginger note lingering.”

    Other tasters detected “apple, quince, grapefruit, herbs, mineral accents.”

     

    Our noses caught the pear aroma along with a good acidity. For a lighter feel, drink well-chilled. We liked it best with food having first enjoyed Jean-François Mérieau Bulles (2009) at Select Oyster Bar where it matched extremely well with their fabulous seafood preparations.

    Sweet Cheeks Q in the Fenway may seem to be just for the meat lovers in the clan, but they put out some great veggies and a tray of hot and cold scoops (as they call them) with a remarkable farm salad that will put a smile on anyone with a preference for vegetarian fare. And, remember to order the crazy-good biscuits. (You may want to treat Dad to a doggie bag of them for the rest of the week!) Check out our Sweet Cheeks posts:

    If you’d like to treat Dad to something really special, consider the ultimate hamburger at the Bristol Lounge at the Four Season’s Hotel. Lunch there for just the two of you, some quiet afternoon, could be a great IOU if you can’t be together on the 21st. Here’s what we wrote about that burger.

    Another great spot to share a meal, any day of the week, is Coppa in the South End. You can even top off your meal with a quick shopping trip to Formaggio Kitchen South End across the street.     Our final suggestion is a trip down memory lane. Take Dad someplace where he used to take you if you have an old favorite that survives to this day. For Penny, this might be Evelyn’s Drive-In. For Ed, The Bubbling Brook in Westwood. This day would be about remembering and laughing as much as about the food.

    And, for the best gift, let Dad choose something from his Wish List. Get an Amazon gift card! You can send it by email or print it out to tuck into a greeting card. And, if he doesn’t shop online, offer to sit with your Dad and take him on an Amazon shopping trip.

  • Michael Serpa Selects Champagne Jacquesson Cuvée 736 as Our Sparkler for June 2015

    We toast June 2015 with Champagne Jacquesson Cuvée 736 thanks to Chef and Partner Michael Serpa from Select Oyster Bar in Boston’s Back Bay.

    Since the opening of this neighborhood spot back in April, we’ve enjoyed many glasses of sparkling wine with our meals and afternoon snacks at the Select bar. We picked one and then another as a possible wine to celebrate the arrival of June, but couldn’t decide. We finally asked Chef Serpa if he would choose for us and he agreed.

    We slipped out onto the patio at Select while lunch customers were finishing up their meals to photograph this wine.

    One of the first things we learned was that, in addition to having a sparkler to enjoy on June 1st, our newest wine mentor was offering us another importer to add to our list of great resources. He loves the wines from Vintage 59 and offers a number of selections from their portfolio on his current list. 

    Chef Serpa calls Champagne Jacquesson Cuvée 736, “Balanced.” We agree and love that he has picked so many wines like this that match perfectly with his food. As to this one, he pointed out, “Champagne is the ultimate food wine!”

    You’ll notice that the glasses used for this tasting (which was generously shared with us) are not flutes.

    Serpa has great reasons for his sparkling wine glass choice, “Any nicer sparkling wine, I think, just works much better in a standard kind of wine glass rather than a flute, just because you get the aroma…” “When you’re drinking great wine,” he said, “I think it should be in a proper glass where you’re going to get the full experience of the wine.” 

    He recognizes the celebratory feel of a flute and you’ll find flutes on hand at Select, but you may be offered the choice of a flute or a wine glass with a particular wine.

    Between lunch and dinner service, we moved inside to the large table by the window to talk more about wine.

    Wine Temperature

    You may also have noticed that he did not put this bottle in a wine chiller. We often suggest drinking a great wine, like this one, through a range of temperatures. We were delighted that he agrees, “As it warms up, you taste a little bit more of the wine.” He explained that with the lower alcohol levels in many sparkling wines, you won’t experience that hot taste of alcohol as the wine warms, the way you might in a 15% ABV wine. You just enjoy more of the full flavor the wine has to offer.

    A Toast for June

    We asked Chef Serpa what he’ll be toasting on June 1st as he joins us in welcoming a Happy New Month! He has great reason to celebrate because he’ll be toasting his 30th birthday on June 2nd. He said, “I think it’s going to be a good year!” We agreed and wished him a good decade. He responded that the first 30 were good!

  • SELECT Oyster Bar: Our First Taste

    We've been walking by the windows of Select Oyster Bar all winter watching and waiting for signs of the opening of this restaurant from chef Michael Serpa who had served us so many spectacular meals during his years at Neptune Oyster.

    Yesterday, we went in for lunch, to taste, to try it, and to enjoy a couple of hours off during a very busy week. Fortunately, we snapped a few photos with our phones to record our first meal in a place we hope will become a neighborhood hang out for us.

    Penny decided to splurge on the pan-roasted Maine lobster with Vidalia spring onion, brown butter, and lemon. With her first bite, it was clear that we were going to write about it. After a couple more bites she proclaimed, "Move over Jasper White, there's a new pan-roasted lobster champ in town and his name is Michael Serpa!"

    Penny's Take on Her Lunch

    I know that I will always remember my first bite of food at Select. Just as years after Jasper's closed, in my mind, I could still taste that wonderful pan-roasted lobster that Jasper White made famous.

    Michael Serpa has put his special spin on this classic preparation with just a few ingredients and a great deal of skill with the pan. Smoky, sweet, slightly grilled onion flavor, balanced with nutty brown butter and lemon, bathed every cranny of a beautiful hard-shelled lobster.

    The lobster meat was so tender that I was not afraid to offer Ed a piece of the tail meat early on my way to devouring everything but the shells. (Ed is very fussy about how his lobster tails are cooked.)

    I did share a bit of claw and a piece of onion, but for this lunch, he was on his own. He would not be eating part of my meal. I told him I would be awhile and that he should order more food if he was still hungry. So, he did.

    Ed's Lunch Notes

    First of all, the lobster – the tiny bit that I managed to salvage from Penny’s grip – was, as she said, so tender (including the tail) that it reached applause-worthy perfection!

    The mignonette sauce for my oysters (with the onion element chopped so fine it remained in suspension) was served in a easy-to-squirt bottle and added a nice accent to my Island Creeks.

    The Icelandic Arctic Char, cooked just enough and combined with crispy skin, was a perfect intro dish.

    While Penny was still busy with her lobster, I tried the Blackboard Crudo of the Day: Tender chunks of Yellowfin Tuna with bright accents.

     Wines Were a Hit, Too

    Penny was looking for something a bit lighter for an afternoon wine and picked Jean-Francois Merieau "Bulles" Touraine Sparkler. She borrowed the bottle to add a photograph of the label to our wine app. It is now on our wishlist next time we go wine shopping.

    Ed enjoyed the Châteauneuf-du-Pape Blanc which paired well with his oysters and char. Txakoli (Arregi), aerated with a pour from on-high, was a fitting match for the tuna and allowed us to linger at the end of the meal.

    Service Charge Memo

    We do want to put readers on notice that there is a service charge of 20% added to the pre-tax portion of the bill at Select. We don't mind, since we normally tip that or more. We took advantage of the extra tip line on our first bill to round up a bit, the way we would have if we were filling in the tip. 

    There are a number of conversations going on in the Boston food world about this decision to make certain the wait staff is properly rewarded for their efforts. We see a number of positive aspects and will write about that later.

    All we'll say for now is that we know where we'll suggest going with anyone who quibbles about tips or embarrasses us by leaving too little. At Select, we won't have to sneak back to the table to slip a bit extra to the staff or make it up to them the next time we dine. 

    And that's a good thing, because we'll be looking for any excuse to go back to Select Oyster Bar, soon and often.
