  • Do You Mise En Place When You Cook?

“Oh come on, no one really does that,” said a friend when I began a cooking lesson with a plan to lay out all our ingredients. While I may not do it perfectly every time I cook a meal, I generally use the technique of “mise en place” or “putting in place" the ingredients needed for a dish.

Wine for deglazing the pan seems to be my weak spot resulting in many an urgent call of, “Ed, please open a bottle of white right away!” I do, however, have a bottle of water standing by my stove to prevent scorching while I wait for the wine. In most cases, a bit of water added to a hot pan won’t hurt the finished dish.

Even with something as simple as making chicken soup, I'll gather everything I need on a half sheet pan and put it on the range next to the soup pot. (That half sheet also keeps half of the cooktop free of drips and spatters. See more of our smooth cooktop tips here. )

If you are following published recipes, take a look at those and check your supplies. If it's a meal you make without a recipe, run through the steps in your mind. Make a shopping list if necessary. Remember that you will also need pans, space in the oven at a specific temperature, stovetop burners for different components, counter space for working with both raw and cooked ingredients, and a place for equipment that needs cleaning.

Knowing exactly where you will place a hot pan when you remove it from the oven is a great feeling. If your kitchen is as small as mine, this may mean having trivets set out on your dining table. I also line trays with dish towels in the dining area to clear away pots, pans, and dishes that I’ve cleaned as I cook.

    Prepare to Cook

What professional chefs refer to as “mise en place” is an orderly arrangement of  ingredients – cleaned, cut as required, measured, and ready to use – as you begin to make your dish. My counter space is very limited so unless more than two burners are needed, I put a half sheet pan on the unused section of my cooktop and use that to hold my mise en place. This has the added benefit of keeping that side of the cooktop perfectly clean!

Individual items can be placed in custard cups or small containers. Years ago I bought stainless steel containers in assorted sizes at an Asian market. I use those to hold everything from chopped garlic to plucked herbs. Larger items like carrots, onions and celery (especially if they will go into the pan together) can be combined on a tray or smaller sheet pan. Cheese can be grated directly onto waxed paper or parchment and set aside.

    6a00e54fc42bb88834017c3663d330970b-800wi

    Order of Preparation

You can avoid cross contamination if you prepare ingredients that will remain raw first, produce that will be cooked second, and meat and fish, like the lamb burger above, last. This will also allow you to keep the most perishable foods in the refrigerator longer.

If your meat or fish need to marinate or some tricky preparation is needed, you can opt to do that first, return that item to the refrigerator, thoroughly clean your work area and tools, and then go on with the remainder of your mise en place.

Give this technique a try if you’ve been cooking on the fly without mise en place. I think of it as a stress buster and often wonder how many budding cooks have been frustrated and perhaps ruined a dish because they began to cook without a plan in place.

  • Elegant and Seductive, the Allure of Champagne Duval-LeRoy Rosé

While it might be the look of the bottle with its slender, decorative neck that first catches your eye, Champagne Duval-LeRoy Rosé is not just another pretty face. It’s what’s sealed within those delicate curves that make this premier cru wine such a special treat.

    CHE_9940 - Version 22016-02-27-Duval-LeRoy-Rose-Prestige-premier-cru© 2014 Penny Cherubino

The Champagne House lovingly describes this Rosé’s salmon colored bubbles as “a string of fine pearls” escaping from the elegant bottle which owner Carol Duval-LeRoy created to reflect a certain femininity. Taking her lead, we chose to photograph the wine in a more feminine setting.

    CHE_9900 - Version 22016-02-27-Duval-LeRoy-Rose-Prestige-premier-cru© 2014 Penny Cherubino

From its lovely aromas of “wild cherries, figs and even a hint of ginger,” to the balance of the Pinot Noir and Chardonnay and just 12 % ABV, this is a wine for us.

We think it’s a party in a bottle! The tastes are more like a pastry with a bit of sugar on it but still having that lemon-curd tartness to it. There’s definitely a nice balance to this sparkler.

    CHE_9914 - Version 22016-02-27-Duval-LeRoy-Rose-Prestige-premier-cru© 2014 Penny Cherubino

As this exquisite Champagne Rosé warmed in our glasses (from near 50 degrees to about 65 degrees) while we photographed the bottle, the depth of tastes and aromas continued to develop. This wine has been added to our Best Of list. Wow!

We purchased our bottle of Champagne Duval-Leroy Rosé premier cru more than a year ago at Brix Wine Shop in Boston for $51 as part of a mixed case. What a great way to celebrate the arrival of March. Cheers!

  • Guinness’ Month Is Almost Here!

    CHE_9762 - Version 22016-02-19Guinness- Irish-Jack-Russell-Terrier -© 2014 Penny Cherubino

Look who we met the other day – a friendly little guy named Guinness! This year old Colorado transplant has arrived in Boston just in time for the wearin’ of the green. And, with a name made for celebrating, he’s going to fit right in.

His person told us that Guinness is a Connemara Irish Jack Russell Terrier (this keeps getting better).

Besides being one of Penny’s Favorite Irish Whiskies, Connemara is also a style of step dancing. We mention this because Guinness is already displaying some very intricate paw-work that definitely has potential.

All we know is that this impressive pup makes a great first impression. Guinness was polite with Poppy and passers-by, has his Boston license, and is already well-trained – he sits on hand signals even from strangers.

  • MeMail App Is Our Friday Link

The MeMail App is something I use all the time to turn random thoughts, promises, and ideas into a list that will appear in my email program the next time I sit down at my computer.

Screen Shot 2016-02-23 at Tuesday, February 23, 20166.47.53 AM

As I sent myself an email to do a post on something else I had just recommended to a friend, I quietly laughed at myself because I was using MeMail to get the job done, just as I often do many times a week. But I had never done a post recommending that readers invest $1.99 in this clean-cut, simple, productivity tool.

In the Apple App Store the description says, "Featured in TED Blog: '25+ apps to make your everyday life easier' (2014-09) Capture a thought, to-do, or scrap of information, FAST! MeMail does one thing exceptionally well: send quick emails to a pre-set address. Email yourself reminders or notes? Just launch, type, and send — that's it …"

It really is that simple. You set it up with your email address when you get it and keep it handy on the front screen of your phone. When you want to remember something, you open it, type (or in my case dictate) what you want to remember, and hit send.

This property found its way onto our "Then and Now" list because a photo of it from American Architect and Building News (January 1, 1901) keeps showing up on eBay labeled Charlesbank.

MIT has owned the building since 1937. In 1969, the building was included in the Historic American Building Survey. From that survey we know the history of ownership based on the Middlesex County Registry of deeds.

    • "1900 J. Whitman Bailey buys land at 305 Memorial Drive from Embankment Land Co. for the use of Samuel Carr, Francis Peabody, Jr., and Benjamin P. Hyde as trustees of the Riverbank Court Trust, established January 1, 1900. Deed Book £798, p. 220."
    • "1905 Albert S. Apsey and Hales W. Suter acquire land and buildings after foreclosure of Riverbank Court Trust's mortgage to Mercantile Trust Co. Deed Book 31*43, p. lUo."

  • Breakfast for Supper on a Piece of Toast

We love to have breakfast for supper and we recently decided that breakfast on toast would be fun.

DSC_8091 - Version 22016-02-13eggs, tomoato, eggs, toast, Chicken, Maple, sausage,© 2014 Penny Cherubino

This was a Trader Joe's meal. The bread is a wonderful toasted slice of the sourdough boule that's available in our local TJ's store.

We topped it with scrambled eggs, TJ's Chicken with Maple Breakfast Sausage, and the brownish tomatoes they call Kumatos. A few snips of scallion finished the dish.

    DSC_8072 - Version 22016-02-13Chicken, Maple, sausage,© 2014 Penny Cherubino   53893-maple-chicken-breakfast-sausage

This would make a great brunch dish for a group because you can prepare all the components and then assemble the servings on a big platter or tray.

DSC_8076 - Version 22016-02-13eggs, tomoato, eggs, toast, Chicken, Maple, sausage,© 2014 Penny Cherubino

We sliced the sausage on a diagonal and piled on lots of it. (This was another item Penny bought because the TJ's Crew was offering samples. She found it tasted just like the sausage on your pancake or French toast plate when they mingle with the maple syrup poured on the main course.)
