  • On March 1, 2023 We’ll Raise a Glass of Raventos i Blanc de Nit Cava

    This month we'll raise a glass of Raventos i Blanc de Nit cava. This sparkler certainly qualifies for inclusion in our year of choosing wines associated with great memories and great people. We have a scrapbook of photos of this wine in some of our favorite places. Moreover, we are grateful to four wine mentors for sharing their knowledge of this cava and its history with us.

    This is one of many wines we discovered thanks to recommendations from Thomas Fielding and Scott O’Connor, one time owners of Perry's Wine and Spirits in Provincetown. These former restaurateurs chose the selection at their shop like a well-curated wine list.

    Perry's was always a stop on our initial shopping trip when we arrived for a week or two. We also loved their clever "OPEN" and "NOPE" signs. The last we heard, these gentlemen were headed for retirement in Mexico.

    Thanks to them, we enjoyed many bottles of this great value wine as we made memories in one of our very special places. We'll think of those times with every sip this month.

    Back in Boston

    Penny ordered Raventos so often at Select Oyster Bar that the staff would often just ask, "The usual?" Select owner, and another wine mentor, Michael Serpa, told us more about the winery and its history.

    On the other side of town, we learned even more from Alcove Boston owner and long-time wine educator Tom Schlesinger-Guidelli. He likes this wine so much that he offers it in half bottles, 750s, and magnums. We've followed Tom around since his early years as a bartender at Craigie on Main.

    Raventos says, "Five centuries of winegrowing, tradition and family."

    Raventós i Blanc is a winery with one of the longest documented winegrowing traditions in the world. The family farm where our wines are now produced has belonged to the Raventós family since 1497. Five centuries working 90 hectares of vines and forest, a dynasty closely associated with the land from one generation to the next. Today, Pepe Raventós, who represents the twenty-first generation of the family, farms 44 plots using biodynamic winegrowing methods and is committed to maintaining the estate of vines, wood and lake as a complete entity. Raventós i Blanc is faithful to tradition and upholds the relationship between man and nature at the very core of its production philosophy."

  • For Our July 2022 Toast We Raise a Glass of Guy Larmandier, Cramant Grand Cru Blanc de Blancs to Great Importers!

    Today we will toast all the great wine importers whose work and skill have introduced us to great wines with a glass of Guy Larmandier, Cramant Grand Cru Blanc de Blancs from Neal Rosenthal Wine Merchant.

    This is one of the few Blanc de Blanc or all Chardonnay Champagnes we like. We would normally select a Pinot Noir forward Champagne. However, the very fact that this one was from Neal Rosenthal made us try it.

    Neal Rosenthal describes it, "From this renowned grand cru in the southern tier of the Cote des Blancs, Larmandier’s Cramant is textbook stuff: beautifully brioche-y, yet with a driving floral elegance and an effortlessly pungent minerality characteristic of Chardonnay grown in a place where it’s truly at home."

    When you find a wine you love, turn the bottle around and look at the back label. A few of our favorite importers like Neal Rosenthall, Kermit Lynch, and Oz Wines make it easy by proudly displaying their identification in an easy-to-find fashion.

    Sometimes you'll have to hunt for the information. To find great importers you can also ask your local wine mentors. For us, a wine mentor is someone who adds to our ongoing education in all things wine and wine-related.

    If someone has a great wine list, they probably have a few importers that they depend on to provide a dependable selection of wines that fit their palate.

    We've also enjoyed half bottles of this lovely Champagne at Select Oyster Bar over the years. It's not always on their list but when it is, we recommend you give it a try.

    We are longtime fans of Txakoli wines. We discovered them many years ago at Jose Garces restaurant Tinto in Philadelphia. On our return, Howie Ruben of Bauer Wine & Spirits ordered it for us and kept us supplied with this summertime favorite.

    Then came Select Oyster Bar where we found a new wine mentor Michael Serpa who shared our love of Txakoli. He educated us about the speed pourers that made pouring this wine on high to activate the bubbles a bit easier.

  • A Gift of “i Clivi RBL Brut Nature 2017” to Toast June 1st, Great Bartenders and Wine Mentors

    The wine for this month's toast, "i Clivi RBL Brut Nature 2017", was delivered to us by one of the special people from behind the bar at Select Oyster Bar, Gabe Bellegard Bastos.

    In discussing wines in the months before the shutdown, he learned that our theme for our 2020 Sparkling Resolution wines was terroir. As we sheltered-in-place, Gabe brought us a favorite from his wine rack that happens to be a perfect fit.

    The best bartenders and servers often have wonderful stories to go with the wines they recommend. We asked Gabe how he discovered this wine. He texted:

    "That wine was a by-the-glass pour at my very first restaurant job, back when I was still writing for Eater and going to school and I had not yet decided to fully commit to working in restaurants forever. The name of the restaurant was Ribelle, which means rebel in Italian, and wine service/ education were both very important there so this was the first wine I really *learned* and understood. And then years later, we ended up pouring it by the glass at Bar Mezzana too so it feels like an old friend, and between serving it to guests, and the infinite times I brought that out to a party, or opened it with friends at my place, I just feel a special connection to it."

    Great Bartenders Have Been Our Wine Mentors

    Much of what we know about wines has been the result of bar stool classes conducted by knowledgeable bartenders in fine restaurants. These men and women were happy to share what they knew about the wine in our glasses. They cared enough about their customers to remember what we liked and didn't like in wines and have been wonderful guides through this complex world of grape magic. Here is a bit more Gabe shared with us about this wine:

    "On a more wine note, as you know I love bubbles. And, I love how unique that bottle is. It does not use the Champagne or the Charmat method, it uses a rather unusual grape, and it is from a region of Italy that isn’t particularly known for great wines. But, that wine is just so dry, and vibrant, and all those things give it such a distinct personality. I hope you enjoy it."

    Gabe knows we love bubbles too! Part of our enjoyment of this wine will come from Gabe's kindness and thoughtfulness in sharing this with us and delivering a perfect wine for our June 1st toast.

  • Raventos i Blanc de Nit Takes Us to Spain for Our February 1st Toast

    Raventos i Blanc de Nit is such a favorite with us that one of the staff at Select Oyster Bar asked Penny if she wanted her usual last week, meaning Raventos. That question put it next up on the list of wines we would feature this year as we explore the concept of terroir.

    Each month in 2020, we'll feature a bottle of wine from a different place. Some will be new to us and some, like this one, will be old favorites from great winemakers who respect the land and let the natural taste of the grapes and the land come through in the glass.

    The Raventos family has been making wine on their land since 1497. They say, "We stand up for the huge potential that our terroir has for creating sparkling wines."

    The Oxford Dictionary defines the word terroir as, "The complete natural environment in which a particular wine is produced, including factors such as the soil, topography, and climate." And, "The characteristic taste and flavor imparted to a wine by the environment in which it is produced."

    The words "Conca del Riu Anoia" on the label are a part of an effort by the Reventos family to create a recognized wine appellation with some of the specific characteristics we happen to look for in a wine. These standards include: using native varietals, biodynamic methods, estate-grown grapes, and proper aging.

    They write, "Our dream is for the Raventós i Blanc wines to have their own name: Conca del Riu Anoia, the name of a small geographical area, centred around the River Anoia Basin, between the Catalan Pre-Coastal and Coastal Ranges."

  • Fennel in a Supporting Role

    Recently, Ed discovered that he actually likes fennel. We were sharing a lobster roll at Select Oyster Bar.

    (Yes, that is half of the lobster roll and salad.)

    He was digging into the salad that’s served with it and asked about the thin slices of some vegetable scattered among the lettuce leaves. When told it was fennel, he was surprised.

    His father loved to chomp on big hunks of raw fennel and tasting it that way had put him off this licorice flavored bulb. Ed didn't realize that he had been enjoying a milder version of fennel’s flavor in a supporting role in some of his favorite meals for years.

    Bulbs and Fronds

    Fennel is a staple in our vegetable bin. Thin slices of fresh fennel bulb are in many of our favorite fish recipes like fish chowder or fish baked in parchment packets. When we serve a fish topped with a breaded stuffing, there is fennel in that mixture. If there’s a piece of fennel that needs to be used, it may go in any soup from chicken to minestrone. Chopped fennel fronds often appear in his salads, stir fries, and stews.

    This salad of thinly sliced asparagus and shaved fennel with lemon juice, capers, and lemon olive oil became a spring favorite for both of us this year.

    Both fennel and fennel seeds are among the ingredients in one bolognese sauce recipe we love!

    Fennel Seed

    Fennel seeds are in our homemade chutneys, ground in the spice blend for our favorite grilled salmon, and we even make our own teabags for a spiced tea that contains fennel seed. Most of the time, we gently toast the seeds in a dry pan to bring out the maximum flavor before adding them, ground in a little coffee grinder or mortar and pestle or whole, to a recipe.

    You’ll often find fennel seeds coated with sugar as you leave Indian restaurants. In that culture they are considered an aid in digestion after a big meal.

    Do your own research and be very cautious when using concentrated forms of a spice like fennel seed. They have long been used for their therapeutic value. However, just like manufactured drugs, they may interact with other medications or have their own physical side effects.

    For example, fennel can have an impact on estrogen levels and may interact with any medication that is sensitive to estrogen levels such as birth control pills or tamoxifen. We rely on the Sloan Kettering database of "Herbs, Botanicals and Other Products" for solid information about this topic.

  • Toasting November with a Special Wine: Guy Larmandier, Cramant Grand Cru Blanc de Blancs in a Special Place

    November is a month to give thanks, so we are going to toast it with a Champagne: Guy Larmandier, Cramant Grand Cru Blanc de Blancs at Select Oyster Bar.

    We recently had another reason to celebrate, so we shared a half bottle of Guy Larmandier Blanc de Blancs over lunch. It reminded us that this is one of the few all Chardonnay Champagnes that we have on our favorites list. It's from one of our favorite importers, Neal Rosenthal. And, it made the beautifully curated wine list at one of our favorite places, Select Oyster Bar. That certainly qualified it for a place in this year of favorites.
