  • Clear, Rhode Island Clam Chowder: Updated from the Archives with Recipe Links

    In 2008, Penny wrote about the original Rhode Island Clam Chowder which is clear and simple.

    Back then she said:

    The topic of clam chowder came up in conversation at an event tonight and I mentioned the real RI chowder in all its simple, clear, and flavorful glory.

    Those of us who spent a lot of years in RI learned there are three recognized clam chowders down there. RI chefs serve the white New England style, the tomato based Manhattan version, and the traditional clear Rhode Island style.

    Last summer, we conducted a search for the best lobster roll in the Greater Boston area. This brought us to many seaside clam shacks and restaurants.

    Along the way, we sampled a few clam chowders. We found two versions of the clear, Rhode Island version.

    The first (top photo) was at Jake's Seafood Restaurant and Market at Nantasket Beach in Hull, MA, and it was a special – their chowder of the day. It was excellent and should be promoted to the main menu. If you are headed to Hull or vicinity, you may want to call ahead to see if they're serving it.

    The second was at Evelyn's Drive-In on Nanaquaket Pond in Tiverton RI. They normally have creamy and Rhode Island Chowder on their menu. This one was not as refined as Jakes but still full of clam goodness. (Remember, all of the above information was from 2008, but we still see the chowder on Evelyn's menu.)

That made us dig through our archives and find this post from 2008 to share with today's BostonZest readers. (Thanks to forgotmypword for inspiring this post.)

    We propose a summer weekend in Narragansett, Rhode Island exploring the chowder options around there. Try Aunt Carrie's in Point Judith for three styles of chowder or George's of Galilee for the Rhode Island Red Amusement Park Chowder.

    Make Clear Clam Chowder at Home

    Today, it's quite easy to find great recipes for this traditional clear, clam chowder all over the internet and in cookbooks. This is probably a dish that settlers learned from Native Americans. And, it was a simple pot of warm food that fishermen could make out on their boats using seawater and a few things from their pantry. 

    Red “Manhattan” Clam Chowder

    Rhode Island’s Portuguese community is credited with adding tomatoes, and often a good amount of paprika, to that clear chowder to create what is often called Manhattan style. 

    Amusement parks and clam shacks across the state all served this with a side order of clam cakes. The latter is a deep-fried clam fritter that was perfect for dipping into a bowl of the red stuff. We told you about this one when the Cod Squad Truck made it for Penny. 

    We love this version from Fine Cooking. It's updated with a bit of thyme.

    The Perfect Pantry tells you how to make it from fresh or pantry products. We admit to using cans occasionally and we really love the frozen Sam's Clams from Blount Fine Foods when we can find them.

    Here is praise for Japer White's recipe from food critic Corby Kummer. We also recommend the cookbook. And, we also encourage you to add the things you like to the bowl. Some places serve the clear chowder with a pitcher of milk or cream for diners to add as little or as much as they like. Crushed oyster crackers are another traditional mix-in.

    Chef White says that “curing the chowder,” or setting it aside to let the flavors meld, is one of his secrets. The clear version freezes well and can then be converted to New England style at the last moment. And, if you make it, you know exactly what’s in there!

    We have been out and about trying the food on some of the new food trucks and unable to resist a few special favorites from the veterans of the scene. Here's what we've been eating!

    At City Hall Plaza, we enjoyed some slices from the Sweet Tomatoes Pizza Truck. We always like to start a pizza test with pepperoni and plain cheese. These two slices will bring us back to test more of their menu.

    Our first taste from the truck representing Biryani Park Sri Lankan/South Indian restaurant from Malden was the Chicken Biryani (shown above). It was great with the chicken cooked on the bone for full flavor and a sweet garnish of carmelized onions.     This scallop roll and clam chowder are from the Boston Shuckin' Truck! These folks offer grilled items that are a welcome change from fried seafood. The chowder was nice and thin (we are not pasty chowder fans) with an herbal undertone.

    At Captain Marden's Cod Squad Truck, we recommend one of their salads if you're in a hurry. This one had a piece of masterfully poached salmon. Update: The Boston Shuckin' Truck has disappeared from the Boston street scene.

    We continue to be attracted to their daily chowder specials. Here you see their shimp gumbo and crab and corn chowder. Both worthy of a second visit. Earlier, we reported on their Rhode Island, Rocky Point Clam Chowder and clamcakes.

    We also could not resist a visit to the new Boston Super Dog Truck (formerly Boston Speed Dog) to see how Chef Greg's grilled pastrami tastes off a new grill. It lived up to our memories and it's nice to have him within easy reach without a car to get to Newmarket Square. Bring a friend, these portions are big enough to share!

    Update: Sadly for his fans, Chef Greg died and the Boston Super Dog Truck is no more.

  • Cod Squad Truck Makes Our Day!

    For the past two weeks, we've had lunch at Captain Marden's Cod Squad Truck at their Thursday spot on Belvidere Street near the Christian Science Center fountain. Last week, the full complement of three trucks was on hand offering some great choices.

    Biryani Park, the Cod Squad, and the Pasta Pot are together for Thursday Lunch.

    A conversation with The Cod Squad crew on twitter ensured where and what we would be ordering last Thursday. After they read our post last week, they made an offer we were not about to refuse!

    Any time a chef is willing to make something especially for us, we are honored. And, it has been a long time since we enjoyed some great RI style chowder and clam cakes so that's what we asked them to make. Penny even sent the recipes for Rocky Point Clam Chowder and clam cakes.

    When we arrived, there it was on the special's board. And, the woman in front of us in line ordered it too!

    We both ordered our special and have to say that Chef Brian Sway did a masterful job of recreating the chowder of our youth. It had nice big pieces of clams, perfect spoonable size potatoes, and perfect seasoning. Turns out, he had some special memories of Rocky Point of his own.

    In the case of the clam cakes, chef outdid himself and certainly improved on what we used to call "sinkers" when Rocky Point made them.

    Chef Sway's were light and airy with plenty of clam bits, a touch of scallion, and a perfect fry job. These floated as we dipped them in our chowder (the traditional Rhode Island way to eat clam cakes) and in the spicy remoulade he served with them for those new to this treat.

    Penny chatted with the chef when she went to thank him for making this for us. Now that he has satisfied our cravings with a very tradtional rendition, he has plans to change it up a bit and make it his own. We look forward to trying it.

    But, we don't think he should change a thing about his clam cakes. This could be a new Boston Food Truck sensation, like The Dining Car's Crispy Cauliflower. These could become a trademark treat you seek out the truck to enjoy.

    Biryani Park, the Cod Squad, and the Pasta Pot are together for Thursday Lunch.

    A conversation with The Cod Squad crew on twitter ensured where and what we would be ordering last Thursday. After they read our post last week, they made an offer we were not about to refuse!

    Any time a chef is willing to make something especially for us, we are honored. And, it has been a long time since we enjoyed some great RI style chowder and clam cakes so that's what we asked them to make. Penny even sent the recipes for Rocky Point Clam Chowder and clam cakes.

    When we arrived, there it was on the special's board. And, the woman in front of us in line ordered it too!

    We both ordered our special and have to say that Chef Brian Sway did a masterful job of recreating the chowder of our youth. It had nice big pieces of clams, perfect spoonable size potatoes, and perfect seasoning. Turns out, he had some special memories of Rocky Point of his own.

    In the case of the clam cakes, chef outdid himself and certainly improved on what we used to call "sinkers" when Rocky Point made them.

    Chef Sway's were light and airy with plenty of clam bits, a touch of scallion, and a perfect fry job. These floated as we dipped them in our chowder (the traditional Rhode Island way to eat clam cakes) and in the spicy remoulade he served with them for those new to this treat.

    Penny chatted with the chef when she went to thank him for making this for us. Now that he has satisfied our cravings with a very tradtional rendition, he has plans to change it up a bit and make it his own. We look forward to trying it.

    But, we don't think he should change a thing about his clam cakes. This could be a new Boston Food Truck sensation, like The Dining Car's Crispy Cauliflower. These could become a trademark treat you seek out the truck to enjoy.

  • Another Version of Clam Chowder – No Cream or Tomato!

    Two types of clam chowder seem to dominate the chowder houses of the Northeast – New England and Manhattan style. But there are a couple more versions that we enjoyed during our years living in Rhode Island. We always refer to them as "clear Rhode Island clam chowder" and "amusement park red chowder."

    Last week, Penny whipped up a version of the clear chowder from a new recipe that was tweaked by one of her favorite food sites, Leite's Culinaria – just six ingredients in the recipe.

    Penny added parsley for color and made it seven. She also used some uncured bacon instead of the salt pork. But it was tasty, and we love the idea of adding that dash of Worcestershire sauce. Penny says that's something her Uncle Al, the Navy chef, would've done.
